It doesn't matter at all when you have an inhumane amount of melons, carrots, cookies, baked potatoes, etc., which is incredibly easy to have even without a large farm.
But they take more inventory space and are used quicker then a steak would, even at higher levels you would need to take this into account when going on an adventure. If your not really venturing out? Well this update doesn't really concern you since you won't be taking much damage.
Balance is great, yeah. Like maybe balancing skeletons so they aren't machine gunners... Oh right it's a nerf of us, the player... I mean 'balance'. Who needs new content and hostile mobs to actually make the game more difficult?!
For me, grinding is the best, I llove a good balance between my index finger mashing the LMB and middle finger mashing the RMB.
After all, developing carpal tunnel syndome is the fun part of the game and what Mojang is developing towards, right?
I think that this is a horrible idea. It was bad enough already that you needed to have at least 85% of your hunger to regenerate health but it is worse now that you need to eat food to regenerate. They should go back to the old hunger system or make it like Minecraft Pocket Edition where food restores health.
Im pretty sure the amount of starvation damage you take is scaled by difficulty. So if you have trouble managing your food, just play on normal or easy. You may lose a few hearts, but you will never die of starvation on these difficulties (unless they changed something in a recent snapshot).

I think this change is good and a step in the right direction. I agree exhaustion numbers probably needs turned down a little and the health regen limit of 8.5 hearts probably should be changed to something like 7.5 (or perhaps variable depending on difficulty setting).
According to the little chart on the OP (I have not had the time to test it myself yet), this new system does not sound all that bad. Assuming that chart is correct, one cooked steak or pork is all you need to heal yourself to full no matter how damaged you are. Also, melons, which have to be one of the WORST FOODS IN THE GAME, can heal you in 2 slices.

I agree with lowering the health regen limit- 8.5 seems a tad unreasonable. As you said, though, I agree with the direction they're taking. Allowing more interplay between hunger and health helps to regain some of the better portions of the pre-1.8 system while leaving out some of the less favorable ones.

I don't really like the change, but I guess it just needs some getting used to. It doesn't really affect me much anyway though since I don't really eat a lot other than meat in the game and even if I did, meat would be a way to "fix" the nerf and just be another reason to eat steak

I don't really like it, I also didn't like the previous hunger bar that much.
I use a mod now, which gives me back the very old health system. But I still want to voice my concerns with the new system.
In an established world food is no problem, you just go to your food source/storage and eat. But when you start a new world, you are constantly searching for food.
Usually I want to look around in a new world, explore the different areas and choose a place where I want to stay. With the new hunger system however, you'll starve, unless you collect food right from the beginning.
As many have written before, it's just an annoyance, a chore.
Part of the problem is the fast depletion of the food bar while moving/jumping. I think if it'd drain at a fixed rate, no matter if you are standing or jumping/moving, it would be more balanced and less frustrating.
Actually this is the only major annoyance I have with it.

I find it funny that you say it makes no difference for vegetarians, and you say that it makes it impossible to survive until you get lots of food... Interestingly, if you were to choose not to eat meat, there is no way to survive... But if you do eat meat it really isn't that hard.

I don't get why people think this is such a big deal... Maybe it is a little excessive, but the way I see it is that if sprinting, jumping, hitting things, breaking blocks etc. takes food, then why shouldn't healing? I think healing would take more food than any of those.
I like it, before apples didn't have much of a point, but now I might eat an apple so I can continue on and not wait until I can regenerate enough health with food.

I'm up for making the game more difficult but this doesn't make it more difficult at all, it just makes it WAAAAY more tedious to do literately anything that involves possible damage. Using ender pearls in now nerfed because you take 2 1/5 hearts of damage which is probably 2 slices of bread. Fighting mobs, you're going to go through food like mad. Fighting the Wither, say goodbye to your stack of steak (okay, maybe it's not that bad, but still.)
Of course, it WOULD be difficult if steak was hard to get, but you can infinite steak very easily, so all it really equates to is just sitting AFK at a farm for a longer time. Artificial difficulty at it's finest.
