I don't know how potions were "balanced", but from what I understand these nerfs are completely in the wrong direction.
For one thing: the golden apples seem like Mojang is catering to UHC (as I said I don't know the specifics about potions). Mojang should be catering to Vanilla, not UHC, for obvious reasons.
Two: if Mojang wants to make health harder to get, he should nerf hunger's health regen (once again I do not know the specifics of the nerfs) instead of the two healing items. Or, better yet, nerf armor so that health is easier to lose (and thus the methods of regaining it have more meaning).
Wishing someone had written down the hunger changes rather than an uninformative "hunger balancing" line. I was referring to the golden apple and potion nerfs there.
In this case, it's two steps in the right direction because it adds more difficulty and adds more purpose to regular golden apples and health potions... and is a step in the wrong direction as the nerfs take away purpose from the reg. golden apples and health potions (though they do add a minor amount of difficulty). *how can you say it takes away and adds purpose? Also the price for the better apple is stupid high, and its no longer worth it since you no longer have the god like regen for a few moments, instead it hardly stops poison.*
Seems like the best option here though would have been to just ignore nerfing golden apples and whatnot for now and just nerf the affectiveness of armor. Now you're going to take more damage and the most reliable source of healing is nerfed, making the other two healing sources more viable. (Scaled to difficulty, of course; armor would be slightly less effective on harder difficulties, I suppose, but increased mob damage already does that... still don't fully understand how the altered health regen from hunger works).*nerfing armor would only guys off more, and ignoring the nerfs wont happen. And the natural regen thing is a togglable rule to turn on / off passive regen.*

Altered health regen disables healing from full hunger, meaning you can only heal from the now useless potions and apples. Also these changes should only exist in uhc, cause not everyone is that much of a masochist. And when did people decide minecraft neede to be hard? If i wanted the difficulty level of uhc id play something that was more fun about it like super meat boy or black metal mode of brutal doom.
Some peeople take survival way to damn serious... have your uhc, but dont have it effect other game modes when people clearly dont like it.
If part of it is that Golden Apples heal only one heart, don't worry; it's only a bug which is being fixed and will be back to normal for a 13w23b snapshot. As for the recipe being changed, I don't care. I never use Golden Apples as it is easier to just surround myself with dirt and wait for hunger to heal me than it is to make a Golden Apple, eat it, and only heal 2 hearts. And besides, weren't people wanting the game to be harder anyway? You people confuse me.

Well, right now I'd say alpha felt like a real hard mode. The minecraft now is where easy mode is just like peaceful, normal is easy, and hard is, well.. still easy. Then the devs throw in stuff that's the total extreme, like hardcore(not necessarily hard but you die forever so) and this ultra hardcore..

only select people complained about it, most people play for crafting and building, not difficulty. Honestly the cost of the new apple along with the crippled effect makes the whole option pointless. And potions dont stack, so they are limited by nature.
I honestly wonder what possesed dinnerbone to do this.
Bad snapshot is bad, but then again there's not one notable thing coming from 1.6, so I don't really care.
I'm 70% on keeping nugget and making mid-tier apple, but really.. If any apple has these effects and uses ingots/blocks, it'll be a waste of gold. I think they need to keep the cost low on those, I'd much rather just use potions (they're much better and more cost-efficient even if they got nerfed).
Stupidest way of making gold have more uses that I've ever seen someone think of.
If they end up changing potion recipes too, I'll probably rage. Instead of buffing mobs and adding more, they're just gonna end up degrading the usefulness of weapons/items. That is not how you approach combat in games. Such a fail.
The only thing I really used golden apples for was occasionally curing zombie villagers. That and night vision potions already fairly routinely burn through my gold supply. I guess making the golden apple recipe cost like ~900% more is fine but if they are going to change it so significantly ..... all the hostile mobs better start dropping nuggets when you kill them.
I think I used the melon recipe exactly once ....
Seriously it isn't even like it adds difficulty or challenge to the game it just dials up the tedium.
The only silver lining I can come up with is somewhere on a PVP server someone just passed out from sheer glee.

Wouldn't it just be easier to make this a server or world option?
That way people would actually be happy with this. Including those who don't care about UHC.
Health Boost isn't actually healing you, all it does is, for 1:30 seconds, make your maximum health 2 more than *normal*.
So no it won't stack and eating several apples quikcly in a row will only reset to duration to the last eaten apple.
So you have to wait for the Regeneration to actually "fill up" those 2 new hearts.
These 2 extra hearts definitely make a big difference, however. But at 8 gold per use, that is still very, very costly.
I'd rather there would be just the one "8 Golden Nuggets" Golden Apple. It is intuitive: you are plating an apple, and using 8/9 of a gold ingot to do that "feels right" and seems to make much more "game sense". Then simply adjust the effect accordingly. No enchanted golden apple using ingots or blocks too, unless it is the exact same 8 gold nuggets recipe, and then you actually use the enchanting table (and thus use up Experience like for all other magic stuff in the game) to make the actual enchantment.
But no, it seems as if Mojang is trying very hard to shred our suspension of disbelief into atomized dust. Dismissing little or even moderately illogical stuff is possible, but it's usually a bad game design choice to deliberately screw up with common sense too hard.

Uh, the "line" seems to be rather arbitrary.
Holding Several tons of Iron, Gold, Dirt, Stone, etc in your inventory? That's fine. not using nuggets to craft a specific food item, however, well, that's apparently crossing the line.
If your suspension of disbelief is removed by having golden apples use nuggets or blocks, how was it ever intact to begin with?

This! 100% agreement here!

Where is my regular hard mode?
I honestly wonder what possesed dinnerbone to do this.
Potions were made even more useless. (Weaker and more expensive)
They are cheese apples not butter apples!

Does the heart addition stack?
