Before the latest (or semi-latest, I forgot) snapshot, if you had water with empty space beneath (or more water blocks beneath) and you removed one of the water blocks, the space would not get filled in and water would start "flowing" to it. This seemed perfectly fine in Minecraft. If you didn't like those, you could have simply placed a block right under the water level and broken it, simple as that. Now, things like waterfalls and ceilings for end structures (I cover them in water so endermen don't teleport) act odd due to the new source block generation. Waterfalls with water flowing from angles that would otherwise not have created a source block no do so, making the water streams lumpy and odd. Using the blocks arrangement "-_-" so that water would flow to the inside and cover the ceiling no longer works because the center point forms a solid block and water starts to spill from the sides. I really don't see how the new source blocks help. If anything, it brings water a step back towards the days where water flowed infinitely and makes it easier to flood/grief places.
Regardless, I'd like to see other people's opinions on the matter.

I haven't noticed any negative effects myself, and personally I like the change. Could you post some before/after pictures?
Your method didn't make the water fixed, it only made the surface look better. The block under it was then a "flow" block which meant swimming into it pushed you down.

No, in such a situation you normally have a pillar. If not make one. If you break the pillar slowly enough, a source block can be made at every step, down to the floor, thus fixing all the source blocks. As for pics, I don't have many to provide, since I found a way to get around the issue. I shifted my source blocks around so that the flowing water has no source waters underneath. This prevents it from forming a new source block in this updated system. So as long as I can get around it, I don't really care about the water update anymore.

It just seems hard that way. with the new water physics, you can make simulated pools that don't drag you down and kill their creator. and, just some buckets at the right places and it will be filled instantly.
I personally like the new way water forms source blocks, makes the waters look nicer with random missing blocks with flowing animations that just look strange.

oops the wording was off, i meant to say "makes the waters look nicer, without random missing blocks with flowing animations that just look unnatural
They made this exact change once before (way back in Beta I think) and rolled it back. I'm sure Jeb was part of the team that first time. I don't know why he didn't mention it.

But this is a crap ton of work, just to fix an eye sore. People HATED this.
Plus it meant someone could grief very easy this way with a bucket, and the only way to fix was doing this for every eye sore.
I always found it a hassle that I'd take a water source block out of the ocean, and form a permanent whirlpool there, my oceans always looked a mess after I played them long enough.
This is far better, and I haven't found a single scenario where it gets in the way. I'd have to see your enderman farm in order to understand what's broken about it.
Regardless, I'd like to see other people's opinions on the matter.

...but that's just like, my opinion, man.

Do you realize how much work that is?
good riddance to them
also space, pull up the patch notes to prove it.

And the new change is:
"Creating an infinite water source no longer needs a block underneath, but has to have a water source block."
