I personally am mixed on the new sound update. I like some of the new mob noises but I absolutely hate some of the more realistic block step noises. So I suggest a compromise: keep the new sounds, but have an option to use the older ones.
The reason the new sounds are so intrusive (to me, anyway) is because Minecraft is not realistic in most of it's aspects, and realistic sounds don't fit with it. They are good sounds in thier own right, but don't really fit in a pixelated world. Older sounds are much less realistic but still recognizable, much like how most everything else is mostly not realistic but still recognizeable.
I wouldn't be even posting this if it weren't for the simple fact that you can't just replace the sounds yourself, as the game redownloads them when you restart the game. So A way to disable that instead would be just as fine for me.
EDIT: changed the topic title + poll, since it appears more people want something like a 'soundpack' folder instead of both, which I agree with. Makes more sense now that I think about it.

The whole reason they put in new is to update the old.
What's the point of the new if you can freely just use the old?
I love the new sounds, except for cows, grass, and sand.
While I don't agree with your argument, I do think that Minecraft should accept "sound packs" as easily as it accept texture packs.
Don't like it, use a old sound pack.
Adventure maps could use custom sounds, (just like custom textures), without having to resort to mods.
People could customize and use their own desirable sounds for the game,
etc.

I wonder, how the hell does the game knows that it is a different sound... or does it redownload everytime you play the game.

It downloads an XML file from http://s3.amazonaws.com/MinecraftResources, checks what files are on disk, and then compares their file size to the entry in the sound index. If they are different, it redownloads the sound, and then adds the entry to a list so that it can then be used by the game.

I do like the idea of soundpacks. It's easy to replace the graphical side of things, why not the audio part? I guess it would require a lot more cleverness than textures, mostly due to the way it's currently done, but I think it could be possible... maybe.
I still hate that stupid damage sound. I sounds like your bones are breaking as you drown or burn. Bring back the "Oof!" sound.

This is a good idea. I think there should be a folder called "audiopacks", though, which is sort of petty because it's the concept that matters.
In the same button in the main menu that has "Texture Packs" should be "Texture/Audio Packs", and then, by default, there would be the new and old sounds to select from, whenever you download the game. Or.... if that's too much to download, there could be a download on the website for the three major sound changes, for people who want whatever.

Thanks for the info! I don't think it would be hard for the community to get used to soundpacks though... I mean, people already know that they must use .png with transparent backgrounds as the format of your custom textures, so if Mojang specified that the sounds must be encoded in .ogg format to be recognized, people would quickly get used to it.
C418 tweeted that we'll be able to opt to use the old sounds soon so it looks like our wishes will be at least partially fulfilled.

You don't have to worry about Mojang making the soundpacks... I'm pretty sure it wouldn't take long for the community bring back those original sets of sounds. I mean, we already have MCNostalgia!
