The only time you're surviving in Minecraft "survival" is the first day/night where you have no resources and barely something that could be called a shelter.
Every point from then on is "thriving" not "surviving".
You build a farm, round up animals, and suddenly you no longer have to survive for food.
You start gathering resources from your mine and suddenly you have Iron Armor, Diamond Tools and a Nether Portal.
Unless you're nomadic, or you're playing that Ultra Hardcore mod, you don't "survive" in this game.
You can make all those farms right now. Also, why would you need obisidian after you've already made a portal? Enchantment tables only take a few blocks so that is not a valid argument. You are looking to reduce the difficulty of the nether something that you claim is already too easy.

Put down two water sources one block apart and boom you have an infinite water source between them. How is that not easy?

The bottom line is that water makes the nether too easy by reducing chances for death via lava and could be abused to prevent ghasts from knocking you off of pillars and killing you through fall damage (via waterbreak). It makes sense that water in a "hell" dimension would evaporate instantly and no longer exist.

I use nether brick and glowstone all time on my buildings and i use to pvp with my friends at the nether, i know very well how hard the nether can be (specially on multiplayer) if you spend most of your time there, sometimes i have to collect +80 stacks of nether brick and +60 stacks of glowstone just to finish 1 project, why?, because that blocks looks really good and are really appreciate for people that like to make complex texture buildings and because i feel like it (problem? ); there is 3 main reasons to die at the nether and loose your stuff; fire, lava and fall damage, that 3 risks makes the nether interesting and fun, with water you can get rid of them without to much problem, if you are in fire use water, if there is a huge lava lake use water to make a obsidian bridge really quick, if you are on a really dangerous 1 block cliff use water go down easily, water actually can kill most of the fun at the nether, there is actually more fun stuff that the water can kill at the nether go and play there if you want to know what i am talking about.

I've only talked about having some way of legitimately placing water in the Nether. I'd prefer a block that is hard to obtain and releases water in one way or another, not a point and right click item that disperses water where you clicked immediately.

An interesting note on fall damage - up until iron golems, I'd never worn iron armour. In fact, since breeding, I hadn't seen fit to wear armour at all. But with the sudden influx in iron I made a set for the novelty of it, and you'd be amazed what an iron suit with even minimum enchants on it can do for you. I built a tower dozens of blocks up into the air, then while decorating it, accidentally fell off. Was amazed to find that sort of height was only worth a heart or two.

The Nether is unique from other areas in MC because it is a hot landscape with lava flowing everywhere. Water evaporating instantly would be the logical conclusion to demonstrate how hot it is because it would not make sense to have the water slowly evaporate. It would be way to complicated when you already get the point that is being made -- which is, yeah it's hot in there.
Do your crops instantly die when they are trampled? No.
Are you able to craft any item instantly when you put it on a crafting table? No.
Is the concept of the Nether realistic? No.
There are lots of things in MC that are not 100% realistic.

It can be as complex as having to go to an entirely new realm to fight a tough boss to get one component of an item, then going to another to get another component, then crafting those components together to create a special item that can only be used after you beat the Enderdragon, or it can be as simple as finding a rare type of Ice block (called Glacial Ice) and using the also fairly-rare Silk Touch enchant to collect it.

Depends of your luck, in my case take more time get Feather Falling than Silk Touch, right now on multiplayer i have 6 silk touch pickaxes and only 1 feather falling boots and i am sure took me +20 boots to get it and make a blaze farm takes more time, resources and risks, is not like make a regular spawner trap where all you have to do is use a few torches and water.
