Well, I don't think that that's the problem with the biome generation. The problem is that each biome looks the same.
I know that sounds strange, but say that you found a taiga biome. I can tell you exactly how it looks like, because the generation for the biome itself is the same. Sure, it could be a little hilly here and there, but it's mostly similar to all taiga biomes. I think people want VARIATIONS in each biome itself. Like the Desert for instance: Why must it always be flat? Why can't there be mountains in the deserts? A bit of variation will make it more interesting.

And yet right now you're complaining about options.
How about in this 'realstic world generation system', biomes that are similar such as forest and plains or tundra and taiga can exist in the same 'area' whilst mountains and oceans separate the drastically different biomes. That way you can avoid the awkward moment when desert meets tundra meets jungle.
You know, I was tempted to vote yes just to appease the fascist "stop having fun" guys that insist on everyone being forced to play an entirely realistic, miserably balanced game (yes, I know, not everyone who wants realistic world gen is like this, but they are a rather vocal group). But then I realized - they wouldn't stop there. They'd start to insist that all world generation should look like the realistic one, and that people who don't play realistic are somehow not "real" Minecraft players or some such nonsense. So I don't really know where to stand on this one...
I don't care about realism in general, but I would like it if biomes influenced the types of biomes around them - like what the OP is suggesting.
I feel that the way biomes work now discourages exploration since after a short while you see most of the possible combinations of biome patchwork. By implementing some type of influenced generation a player would have to explore a lot more in order to leave the snow/cold area he spawned in - for example - to find a new snow/cold area.
Large biomes come close to "fixing" this. (I'm not sure it's as much a problem to be fixed as a preference)
Speaking of preferences, I don't see any problem with options to express preferences except one: right now it's very nice to be able to share seeds and exactly replicate someone else's world, as you add options to world generation - including Large Biomes - it becomes marginally more difficult to share worlds.

A game can be realistic or completely unrealistic or anything in between, including Minecraft. It's not an absolute right/wrong thing. Regardless of which is applied to biomes or terrain, you're still playing in a block world with magic dust, floating islands, portals to hell and zombies and skeletons running around.
