Is there any significance to the new sounds. I hear one that is like a train steam whistle (European style) in the distance. Another sound like a distance jet aircraft taking off or passing overhead. There are also other sounds similar to what you might hear in an amusement style "haunted house". I hear them underground while mining and above ground exploring.
And the Wiki doesn't seem to mention any new ambiance sounds except for the Nether.
Apparently the game has changed the way it determines when to play ambience sounds so maybe they play more often or in places where they didn't use to?
I seem to recall more tracks were added to Minecraft, either from C418 (I think that's who did the original scores) or from a new artist. It was in an announcement somewhere.

(I wouldn't know about new music, when a major update comes around and I start a new installation I often either forget to turn the music off or decide to give it another try, I always turn it back off after a few minutes.)

These have been here since ever. Possibly you had ambiance sounds disabled and forgot, and 1.16.x reset that option to 100% volume.
Some of the longer ones are newish though. More to come if the next update is also cavey (1.13, 14, 16 all added them because all of them added or changed caves/dark structures).
I play PC version (win 10) which I think is bedrock. I hear sounds above and below ground. More of them below. The European train whistle is pretty strange then there is the banging on empty steel drums / barrels sound as well. I really like the one that sounds like a jet aircraft flying by.

The Wiki doesn't mention any new Overworld sounds since 1.13
It lists 19 cave sounds and #19 was added in 1.13 along with 22 underwater sounds.
And, Holy Cow, 1.16 added 121 Nether ambience sounds!
Bedrock apparently got ambience with 1.16.0

Maybe the OP confused Bedrock for Java.
Also, I went straight from 1.12 to 1.14 snapshots so maybe that's why I'm confused myself. 121 new Nether sounds!?
As it is, the new Nether music tends to overplay the old ones, but that's another topic.

Yes, the Win-10 edition of Minecraft is Bedrock.
I guess the ambience sounds would seem quite unusual if you just got them, we've had them in Java forever, practically, since july 2010 anyways.
Way before the official release (and even longer before I got it), so we've had some time to get used to them.

I've heard these as well, they're pretty cool. They definitely enhance the eeriness of the Nether I think
