I've checked all of the trades on stonemasons, librarians, farmers, and all 3 gear smiths, and not a single trade has changed in value or the number of times you can trade per cycle. I have a village with nearly 80 villagers in it and the prices for everything are unchanged.
Confused a bit here, are you saying the wiki has the old trades or the new ones? Because it looks identical to me.
The current version of the Wiki has the new ones.

The changes listed are minor, mostly pricing and how many times you can trade before restocking but I saw the Cartographer was expected to offer one of the explorer maps later, at a higher level.
Have you breed brand new villagers or are they ones that existed pre 1.16?

I started a brand new Win-10 creative world and spawned in a couple of villagers and I seem to be getting the new trades.

Next I loaded in an old world where I'd already found a village but not traded.
Trading with old villagers, even after leveling them up, I'm not even getting the number of trades they were supposed to have pre 1.16, 4 apple trades instead of 5 pre 1.16 or 16 in 1.16
So it seems you need brand new villagers to get all new trading.
I did try it again in my creative world with new villagers, and it's doing the new trades. The bookshelf trade on librarians actually got nerfed, it used to be 6 emeralds for a bookshelf and now it's 9, so I'm definitely going to leave all of my old villagers alone and just make a new one.

Perhaps your villagers' trades haven't changed because they were already locked in place?
For a fair comparison you should level up some new ones.
The Wiki pages from before the update list the expected changes, here's one from 1st of June for instance.

Meh, that's not too relevant if you're a good villager.
The problem is, none of these new numbers are working right. My villagers are still locking after only 5 trades.
