I'm back from a hiatus and want to get back into Minecraft, but I'm worried about starting a new world this close to a major update involving world generation. What I'm wondering is if I start up a new world with the latest snapshot, do I have to worry about weird borders involving chunks generated after the official update drops? Should I just wait for 1.16 to officially release before investing time into a new world?
you should be fine, this update is mainly a Nether update so i wouldn't suggest going into the nether and exploring or building anything you care about losing. everything in the over world will be fine.
Even if you decide to go into the nether to gather resources and explore you can always reset your nether so you can start 1.16 with a fresh nether otherwise you'll have to travel to undiscovered chucks to see any of the new biomes and depending on how much you have explored will depend on how how far you'll have to go. so either way your fine
It should be fine and I doubt any more will be added, but then again, we got basalt deltas out of the blue and altered biome spawn rates, so who knows? It's your call.

As i know so far you can use an NBT-Editor to edit your world and the player data. (i have not testet altering other players data from multiplayer jet)
So anyway: it is usefull to test the latest snapshots and give feedback to your playing experience or bugs you might have discovered.
What matters most is how you experience the latest snapshot. That is what let's the higher up's decide what they include into the next version and what not. Although there are many testers. But do not give up on that! Share your opinion!

If you are afrait of losing your world or the altering of it than just copy it to a safe direction like a folder on your desktop.
