I'm running snapshot 20w16a on Java edition of Minecraft, and even on Peaceful difficulty setting the mobs seem much harder than before to kill. Pigs take 4+ swings of a stone sword to kill, and zombies are taking at least 8+ hits. Also, when zombies catch fire during the day, they burn continuously for several minutes without burning now. I didn't notice this ever happen on 14., even on normal difficulty.
I'm most likely completely wrong, but I'm pretty sure weapons got some kind of change in this update. It could just be a bug, but that might have something to do with it. Not sure though.

Stick to full releases or report the bug to Mojang.
