Loving a lot of it, especially the ocean features and shipwrecks. Like, oceans are fun to explore now because of the kelp forests and trenches and ruins~
One nitpick I have though is the Drowned. Not the mob itself, but the fact Zombies can't swim anymore. It was always much fun to come out and see them hiding in a pool, bobbing there and briefly taking a spot of damage and grunting in response... Now the Zombies and SKeletons just sink. Boring!
I've had zombies come out of caves and then drown themselves because of water making a "wall" or having an underwater base with an unlit room and two open doors... The zombies would walk into it then start floating up and eventually perish. Zombies could still become "Drowned" without having to be "If they enter anything other than waist deep water, they'll eventually change form"
It also meant mob spawner traps involving water elevators stopped working since they wouldn't 'climb' the columns.
If I knew how to change it back, so they could "swim" again I would. Drowned would spanw naturally in dark waters, but Zombies wouldn't just 'sink' then auto-convert.
I think my two favorite things to do are swimming and shooting down Phantoms from the night sky, had a close call the other night but thankfully they got stuck on a tree leaf block and the edge of a building so it gave me a second to chomp on some food!

It's probably been said many times already, but I'll say it anyway, and I'll literally keep it rather short and to the point.
Stop degrading this game's performance! This needs attention! I am not kidding; set a new goal devoted to this if you must! Set a goal to improving performance going forward, even if it happens in steps over versions and months (years?) and requires a lot of re-coding. Whatever practices are being employed and followed, they are having disastrous effects for the game's performance. Namely, whatever was done in versions 1.7, 1.8 (THIS... ONE... ESPECIALLY!), and now 1.13 have been huge notable points in the game's recent life to do this (1.3 did as well, but I give it a pass due to why it was caused, and funny enough it was less of a drop than the other three which have no excuse for any drop), and the ironic thing is, these are the versions in particular to have been stated to improve performance or efficiency. This doesn't build trust or confidence. Whenever it's noted that performance will be improved, instead I see the game's requirements go up to reflect the real impact. It's starting to reach that point where it's excessive and beyond reason.
Mojang/Java team, please devote a goal to improving the performance and changing these coding practices that have drastically dragged down performance since 1.6.4, namely with the three versions I mentioned, the new 1.13 being the latest offense to this.
P.S. I know Mojang likely won't read this. I'm just stating my opinion per the thread.
"Wanting" and "Having" are two entirely different issues. All *MY* games I loved as a teen have been ruined by time: life moves on, and so have I. Oh yeah, that's right, I can login to Good Old Games. I use emulators. I can play Minecraft using older versions.
And so can you.
New content is being created using new techniques. Data Packs are a "thing", and they allow for "mods" to the game not possible before unless you were using Forge or set up a Spigot server JUST so you could play a "single player" map of some sort. I look forward to the coming explosion of new maps and new possibilities.
Absolutely nothing stops you from enjoying your old maps in the versions on which they were created. Even WITHOUT command block changes, anything redstone or using some other version-specific quirk in the game would require you use the older version ANYWAY.
So you can keep playing older maps of the game using older versions, as many do, you can look forward to new maps using new techniques, or do both. But getting salty because Time Marches On is just silly.

Just waiting for Forge to officially release for 1.13.x to remove unneeded mobs from 1.13, like Phantoms, from the game because, in my gameplay based opinion, they add nothing of value to the game.
Fun fact: Clicking a bed every 30 minutes doesn't make you a better player, it makes you one who clicks a bed every 30 minutes. Wouldn't you rather just mod them out of the game completely?

While there are some amazingly boneheaded parts (silverfish eggs instant break, MobB implementation, adding 3D spawning mobs without a 3D spawnproofing method, etc), were the game to run at a reasonable rate (without third-party boosters and on garden-variety equipment), it would (despite its faults) have to be considered a great success.
Considering the program of 1.13:
Code bloat and performance degradation (both unarguably problems when occuring in any program) are another matter.
Given the new material added, a single digit hit in FPS moving from 1.12.2-1.13.(actual release quality version) while using the same hardware would not have been unexpected. [And would likely have occassioned little in the way of complaint.]
Instead the combined Aquatic/technical update [which ought also to have fixed many longstanding outright buggy sections of the code eg lighting glitches] not only left many variants of Ye Dreade Glitche Monster intact, but [dis]improved the game to the point where it has proven unusable for many players.
If there has been ruin by the developers, it has been in this arena.
[For those who wonder if content ruin by the producing company is mythical, try searching "Old School Gaming" and reading a few of the 'discussions'. (Wearing asbestos PJs strongly recommended.)]

I'd also argue that the addition of the Drowned are also another massive mistake Mojang made.
I'd also argue that the addition of the Drowned are also another massive mistake Mojang made.
I intended Drowned to be covered by "adding 3D spawning mobs without a 3D spawnproofing method".
If there is were a way to Drowned proof a volume of water (more than a few deep) without resorting to a 3D matrix of lights, they would be an unobjectionable to useful addition.

Agreed, between this and the changes to squid behavior certain long standing mechanics are ruined which become "features" of 1.13 and beyond.
I do not nor ever intend to spend time near the ocean. It has been proven water is laggy and the ocean temples make it worse as well. Overall performance now is worse than ever.
I personally haven't had any issues with the 1.13.1 update. It still runs at a stable 60 fps on my system, just like 1.12.2 did. I'm playing on my Realm together with a bunch of people and we haven't had any performance issues yet. I must add though that I don't have any CPU crunshing ambitions like enormous redstone 64 bit CPUs or a slimeblock stardestroyer or anything. I also don't really mind if my farm that used to produce 1000 drops now only produces 900. It's not like I ever need that much of anything and I play among my farms, so I rarely need to stand afk to get my resources.
I haven't ever used optifine and that will likely stay that way, because the performance on my system is just fine.
I'm using a Lenovo Thinkpad with an intel Core i7 and a NVIDEA Quadro M1000M videocard.
I've been really enjoying all the new things. I've spent hours hunting for buried treasure and some more hours hunting drowneds for tridents. I don't bother making a trident farm, because I enjoy the hunt.
I see people making comments about having to avoid water to not get attacked by drowneds, but I personally haven't had such experiences. Those drowneds are so rare that I barely see them when I'm on land. The only thing that's a bit annoying is that I used to go sit in a boat in the middle of the ocean if I didn't want to be bothered for a moment. That's not possible anymore and I sometimes forget that, resulting in drowned hugs overload.

Squid were terrible before, though.
While they still suck now, at least the new behavior is a step in the right direction.

I don't considering their post anywhere in the realm of a constructive critique of anything when they are telling people to either put up with it or go play something else.

1.13.1 hasn't been released yet. We are doing ok on our 18w32a Snapshot server, but your best bet is to take time to play with the Snapshots and see.
I think we need to wait to August's Final.
The first Pre-Release was release yesterday.

[see Drowned-proofing techniques wanted… for a relevant discussion. (Further ideas definitely welcomed.)
The matrices of lights (sea lanterns/jack-o-lanterns/glowstone) that are the only solution so far discovered have issues:
What is needed is a 3D equivalent of the fence & torch combination employed against surface limited mobs.
NOTE: Ghasts require a spawnable block, making them (comparatively) simple to spawn proof against.]
Ah, alright.
I was more concerned with their entire implementation; I feel that they do not add anything nice to the game.
