We add what fits in the developer's vision and possibly the communities' standards.
So Minecraft is at it's best when it's just a flat plane in which you can walk around, and mobs walk toward you? Oh and you can jump and gravtiy will pull you back down.

The developer purposefully left his game to another developer. Are you saying that succession is not part of a developer's vision? That purposefully no longer working on the game is not part of his desires for the game?
Or on the flipside, are you saying that the developer's vision is a flawless thing that doesn't need to be questioned or altered? That another developer couldn't possibly do as good a job as the original, and their vision will never be good enough to fill the void? If Notch had a vision of bananas jumping around singing "I'm a dancing peapod!" added to the game, would you have been fine with that?
The community is listened to. Remember the Combat Update? That didn't come out of a vaccuum, you know. It was constantly tweaked until it was released. And then tweaked a bit more. Remember when Mojang changed a thing and then changed it back because of the community? What exactly is so important? Do the majority actually get ignored, or is it a small group of outraged people? Have you actually checked?
What kind of additions do you want to see? Which additions would you like to get rid of? Why? If unnecessary updates aren't bad, what was all that talk about "icing" for?

But how many people are actually asking Mojang for something consistent in that area? Is it really a significant enough number to catch their attention?

I'm with you on the part of "It's just a name." Part of the whole thing with Mods such as Spigot Plugins or Forge is that you can just go nutz whatever way you like, and many of these mods are not only keeping current to 1.12+, one I'm aware of gives you a 1.8 style game, reverting combat to the way it was as well as having other "1.8" features lost in "1.9+", but letting you take advantage of improved security in Spigot as well as allowing for some or all of the new items and features. Actually, it looks like Better Combat is one of several that provide "1.8" in 1.9+ Minecraft. And the "data packs" planned for 1.13 will allow a more secure way of doing some of the things only mods used to be able to do, and provide these features to Reams players and people using Minecraft Bedrock Edition. "Quite a different game" indeed. Every single minigame map created and offered for player's enjoyment.
Some of the changes in 1.9+ have been "feature parity" issues. Some of the changes have been working the game towards the "data packs" feature soon to be released. Even without all that, TheMasterCaver wants a "super duper" cave mining experience? is a trailer for a Terrain Control map with some wonderful cave exploring terrain generated in it, as well as amazing Overworld. Don't like that one? There are many mods to satisfy whatever particular itch someone has. Some of these mods are free, some are not.
And yet, somehow... Mojang isn't doing enough of the "right things", without specifics as to what and why those "right things" are, and "too much" without any eye on those mods that remove new features that a given player doesn't desire. I really don't get it. To me, so much of this seems "complaining for the sake of complaining".

That's exactly why I've made many mods that enhance that aspect of the game:

Vanilla 1.6.4; notice how much cave density varies, with a couple very large cave systems complemented by large cave-free areas, areas of more scattered caves and several smaller dense cave systems. Note that there are not that many more caves overall than in 1.7, they are just distributed differently (the difference in underground air volume is even less due to caves not overlapping as much in 1.7+):
TheMasterCaver's World; caves are based on 1.6.4 with more variation, including occasional larger caves and ravines (rarely up to half a million air blocks in volume), new cave structures, dungeons with more types of mobs and faster spawn rates (I mean really, 4 mobs as seldom as once every 40 seconds and able to run up to a spawner and deactivate it before it even spawns anything?), including a special "double dungeon" with two spawners, more variation in the size of mineshafts (which appear to be much more common but are actually less common than in 1.6.4; vanilla makes them less common near the origin, as in the maps above; they are less common since they cannot generate if there are too many caves in the area, which is something I even added to an otherwise vanilla world because it bugs me that much):

Message to Mojang! you all are adding too much to Minecraft! 1.13 has too many new textures! changing the crafting tables? really? I also don't like the combat update. I'm sorry, I still love Minecraft, but I'm going to stick with 1.8. those were the good old days.

- A whole lot of command block changes. Certainly be annoying for people who use those a lot having to rewrite them all I suppose.
- Texture changes. I personally am not a fan of the ones I've seen but I hardly think its a massive change to the game, especially since texture packs are still a thing that exists and someone will almost certainly release a "classic textures" pack within hours of 1.13's release (probably within hours of its first RC for that matter,) so it would be trivial to revert if you wanted.
- Precious little else.
I'm not sure what you (or Reddit) is super concerned with here? The rename to "Java Edition" I know is something everyone complains about (because you know, that title screen logo is the most important part of the game!) but that was already done in 1.12.2 and therefore not part of the 1.13 plan..

The plan as we know of it at this point consists of two things: command changes and texture changes. I'm pretty sure that the few things you saw would not result in scrapping "most" of anything. You also need to ask yourself: Is this really the majority, or just the loudest group saying these things?
