You can still craft regular golden apples; it is only Notch apples that are no longer craftable. Also, regular golden apples are much more common now, with a 22.2% chance of one in a dungeon chest, compared to 7.2% in 1.8, or more than three times more common (prior to 1.6 they were incredibly rare - just a 0.6% chance, making them 5 times rarer than Notch apples in 1.9, which are 3.1%). They can also now be found in mineshafts (a 28.2% chance per minecart, of which there are usually several), desert temples (23.7% chance per chest x 4 chests so they are very likely to have one), and igloos (a 100% chance of one apple, which is intended to be used to cure the zombie villager). Notch apples can also be found in mineshafts and temples, though they are less common.
Also, as stated by others you can always use plugins or even command blocks to re-add the crafting recipe, even restore their potency (remove attack cooldown, revert armor mechanics, etc). Prior to 1.6 mods had to be used to disable natural regeneration so this wouldn't be the first time game mechanics had to be altered for UHC.

Notch apples were not removed from the game, they are now just uncraftable. After their re-balance, their recipe was a little expensive, don't you think? The apples can now be found in dungeon chests as loot, as part of the new loot tables that are coming in 1.9.
Being a software developer for almost 30 years myself... You never remove features in a system... You add to them. And yes. I do think taking away abilities is never a good idea. I can see adding the chance of finding them in dungeons but you don't take away. *Gets up on his soap box* Like they took away Obsidian farms in the 1.8 update. I have been around since the Beta days and I am getting to like Minecraft a lot less every time something is taken away from the world.

If a feature is broken you fix it, or remove it if it can't be fixed. Mojang decided that Notch apples were broken, so they nerfed their buffs, they were still broken so they were made unobtainable except as loot. Notch apples were broken due to gold farms making them too easy to obtain.
As for obsidian farms, they exploited a bug, why are you surprised that Mojang fixed it? Anything that exploits a bug should be treated as a temporary thing, it may not be fixed for a long time if it's not a serious bug, but it will be fixed at some point.

Well, first thing is that you should NOT talk about multiplayer, why? because plugins. (realms is another thing.. that i will talk about later)
Now, the thing is that this is a sandbox game, and you should be able to do whatever you want in a sandbox game.
and now, the golden apples are literally USELESS, why? because the completely broken new health Regen system, its just stupid.
a golden carrot is better that ANY golden apple now, and there is no way to revert any of those changes in vanilla
i don't mind the combat changes, but the gapples and health regen changes are completely stupid and make no sense in my opinion.
and, no one is forced to use, or do ANYTHING in minecraft: you dont want to play with gapples? don't use them, you don't want gold farms? don't use them..
and because in PvE they are useless, on PvP servers, you can just remove them as you wish.. why????
now, for realm servers, if you dont want there to be golden apples, just remove theme with a command block, don't block the entire minecraft community from having them.
You do know the exact same argument can be flipped around to work for singleplayer right? Commands don't just work in singleplayer, and mods make singleplayer even more customizable then multiplayer will ever be.
So... if you want golden apples, just add them in.
Commands can be enabled in Singleplayer.
Mods are not available for all versions of Minecraft, and some people don't have that particular skill.
This is something that's been a long time in coming in order for Minecraft to achieve a true balance of ease and difficulty. It's finally getting to the point where some things can be challenging, yet the game is still accessible. So far, it's been fairly clear that almost everyone arguing against the change has done so simply for the sake of not wanting change, or wanting things to be easy.
Think about it like this. When was the last time defeating the Wither felt like an accomplishment to you? The first time you did it? The first few times? And how long has it been since then? Do you know why that is? Defeating it was the same thing every time; there was never any strategy or difficulty. Just whaling away on it with powerful items and seeing who killed who first. Grab a Smite V sword, down a God Apple, and you're guaranteed to beat it in seconds.
Now? Different strategy, different challenge. It actually requires some thought. Eating a God Apple will mitigate the damage, but won't eliminate it. Smacking it down with a Smite V sword works, but so does a Smite V axe, if used properly. Being able to solo the Wither actually means something now, because it eliminates a huge advantage on the part of the player.
Changes like these are for the good of the game as a whole. So many people are only bothering to look at the short term, or how it affects them personally. But what about the long term? Look at how this will change the course of history for the game, how everything will look to us as players years down the road. What direction these changes are leading the game.
From this, I can see a future where veteran players actually earn and deserve the respect of the younger, showing them what mastery of the game can do for them. I can see a future where true strategy can start to dominate combat and survival, rather than just being a neat consequence of having played long enough. I can see a future where Minecraft becomes not only something popular and fun, but something powerful. A game with many layers within itself, that reaches far more than it does now. If they continue in the direction they're going now, with moderation and wit on their side, they can create something truly amazing from this game. And fighting these changes will only prove that, rather than wanting for the betterment of the game, you care only for betterment of yourself and the ease with which you dominate your worlds.
You can beat the Wither without a Golden Apple. Just build it underground and drink a strength II potion while wielding a Smite V Diamond Axe and Shield. Notch apples were just one of multiple ways of defeating the Wither. What would be a better use of the Notch apple? During the Ender Dragon battle.
Plus most of use play with mods, and the Wither's a vanilla Boss. Nothing compared to Mobzilla or the Ender Colossus. Mods overshadow vanilla Minecraft.
They should have not removed the Notch Apple, it was a icon back in the days almost like diamonds. Like come on why would someone remove something sooo iconic???

No it doesn't - I mine more than enough gold to craft an enchanted golden apple, often more, every single time I play - with over a thousand apples worth of gold in one world alone, all mined by hand:
This was one of my more extreme play sessions in terms of gold collected - enough to make not one, two, three but FOUR Notch apples - and enough gold from a single cave system to make ten!
For comparison, in a modded world where I removed the crafting recipe and added them to dungeon and mineshaft chests I only found 8 apples over 851 hours spent caving, an average of one every 106 hours - now that's an achievement!
You're forgetting that farmer villagers trade 5 apples for a emerald, meaning if you make a villager farm/find a village, you're set
