Once you've actually gotten all the crystals down, it really doesn't matter what you use for the Enderdragon.
The hard part is getting those crystals with the bars around them.
My new strategy is to hold the axe first, run at them and start off the battle by swinging with that. That deals the high amount of damage. I then switch to my sword, to get as much DPS as possible while in the middle of the battle.
Note that this is in theory, as things related to it may be changed.
That is remarkably easily done. Climb up, mine one iron bar. Punch/shoot the crystal. All except the base iron bars break, jump down, out water to break said fall. Rinse and repeat or the others.
It's not that hard. On the Console Editions we've been doing it for ages.
It tends to be a lot easier when the Enderdragon doesn't charge at you, sending you flying off the pillar and down to a painful death since your landing spot is unlikely to be where the water is.
And to my experience, it rather frequently did so.
Sword has higher DPS, but in Minecraft most mobs have not that much health, so axe is better in some cases, sword is better for pvp though, because people have armor/potions, so you won't one shot them with axe.
And also sword requires 2 diamonds or whatever you're making sword with, and axe requires 3. Moreover, axe takes double durability when used in combat, so you will need to spend 6 diamonds to have your axe in use as long as a sword.
Also sword has swipe attack, that is not possible with an axe. Emagine: youre surrounded by zombies and have only axe. While you can one shot zombie if you have streangth, it takes too loong to recharge to kill another zombie. And with sword you not only will be able to knock zombies back, but also do it quite frequently.
Pretty sure attack speed has nothing to do with your ability to jump.
With a good rhythm it's easy to get consistent crits while attacking at an optimal rate with a sword.

What I did to find out you're right:
Well, I guess that depends on jump/fall speed. If it's short enough that you can consistently crit then you're right. If it's long enough that a sword can't consistently crit while an axe can, then I'm right. If it's so long that both the axe and the sword can't consistently crit, then stuff gets really complicated.
I did some experimenting, and jump+fall time appears to be about 0.64 seconds, which is less than sword attack speed, so you should be able to consistently crit. I watched at the 22nd second frame-by-frame (using an external program) and marked these times:
22.38 first signs of jump
22.66 first signs of falling
23.02 appears to land
My pros/cons post has removed the part about crits, and now I think axes are very well balanced
guess they're two different styles of combat. Axes make for a good tanky build, especially if you're using a shield. On the other hand, if Mojang adds dodging, sidestepping etc... then sword users could rely more on movement and agility to, using cobwebs and potions in their offhand to trick their opponents. Both are good in different scenarios.
It's not complicated, but not simple enough to say one is better. No matter what, always have an axe with you, it's a good tool that can also math a sword! We can't enchant axes right now though, so don't bring a silly axe to fight other players.

Why swords are better than axes
1) higher DPS (~13% against unarmored enemies) (this is less true against high-armor enemies, but still true)
2) cleave if you aren't running
3) Costs only one durability per strike, while axes cost two
4) Costs only two metal to craft, while axes cost 3
Why axes are better than swords
1) low attack speed means more time spent blocking
2) can't be blocked
3) deals more damage on the first hit than swords (because you almost always have time before the fight to charge it up).
Overall, I might use each one just as often in both pve and pvp!
