It's funny how people still care so much about future updates..
Just enjoy the update we're on right now, or stop playing Minecraft for a little bit and find another game. You'll probably be a lot happier if you do.
I think I know why. They're stuck in a vicious cycle.
Think about it. They probably haven't done much by now, so if they release a snapshot, and there is little to no content, we will all be disappointed. Would they seriously want that? So they add more content, making us wait even longer. Then it would still be disappointing. All they're left with is to make the whole release at once and hope for the best.
Once they're in this cycle, it is very difficult for them to get out. They need to make a bunch of content at once, then release the snapshot. It's still relatively early on, they can still get out of it if they take action very soon. Otherwise, we're going to be waiting a while for an entire release.

It's not really a fallacy, because Mojang technically doesn't need to keep updating Minecraft for free. That being said, they should update it if they want people to keep playing, which in turn causes more people to buy the game because of peer pressure/influence.

It is a fallacy. "Free of charge" is not "free of criticism."
the problem is that people think some features after 1.8 ruined the game for them, but they love other ones. for example I couldn't live without the ability to change the sounds with a resource pack (which is not possible in past versions), but I absolutely hate the new biomes introduced in 1.7 .
so if people could stop telling me to downgrade that would be good.

I absolutely HATE hunger. I want to rip it out of the game by its spine. But I like most of the other features, like custom models in resource packs, so downgrading back to BETA 1.7 is not a good alternative.

that's a fair point and I have nothing against your opinion, yet people were asking for new biomes for a long time, so they added new biomes. I see nothing wrong with it. I personally don't like some of the new biomes and the new biome distribution system pretty much ruined survival for me, but I will not come here and complain because I'm well aware of that I'm not the only person playing minecraft.

Mojang isn't a slave for making games. They have a real life because they are people. Human beings have to live their life. While they may enjoy making the game, they don't always want to. They can't constantly update the game. They don't even have to. They do it for the fans. But in between they have their personal life in the way. It also takes a long time to code stuff. It's not easy either. Patience will help keep the game updates rolling out better.
Please bear in mind that I have next to zero knowledge of coding. That said, my theory is that the nature of this update prevents them from releasing snapshots. It's not like they are just adding things, they are completely reworking how a fundamental aspect of the game works. As a generic example (I wasn't around for 1.8 snapshots), if they released a snapshot with diorite and andesite, but not granite, that works. The rocks are not dependent on each other to work properly. But with this combat update, if they release arrows and shields in a snapshot, but the two-handed function is not finished being coded, the whole new combat feature is broken because it can't work properly. So they have to do everything before they can release anything.

The customized options should have let us do what this mod lets you do - it doesn't just do what you've mentioned but even lets you change the size of oceans and continents, and even lets you (mostly) seamlessly change from old to new world generation (remember those chunk walls in your 1.6-1.7 world? This is otherwise the biggest argument against adding new biomes, as even one new biome completely changes the world, unless added to an existing biome as a technical biome) - if a mod can do it then why can't Mojang?
I've also pointed out the lack of customization, other than yes/no, for most structures. And while some will say adding these would make it too complicated surely they can just put the "expert" settings under a separate menu, so most people just see the easy to use sliders and stuff; I even had a go myself at modding in customization of structures, using the settings shown here, plus customization of caves and other features not listed (for example, adding a "size" parameter to mineshafts so you can make them bigger/smaller, like villages).

I'm not saying I disagree with what you are saying, as I completely agree, but I'm saying the way the community explains their opinion for it, I just feel they believe they are entitled to have an update and they feel like if they don't get it within a certain amount of time that Mojang is being unfair. I'm not saying I agree with Mojang spending so much time off of development, but I'm saying that some people kind of want them on it all the time, and it seems like they always want them in their jobs working on it everyday. Obviously they need to do their job or else obviously being fired or whatever, but in my opinion some people are begging and begging for a snapshot, update, and whatnot. I'm just trying to say if Mojang wants to spend a little longer on it, it's for their personal life. Again, not that it's justified. This may just be my standpoint on it, and I'm probably wrong. Thank you though for correcting anything I was wrong on.

1. What about the servers they like that upgrade? Should they just lose the work they did on those servers?
2. What if they like more than half of the update, but dislike slightly less than half?
3. What if they want features of 1.9, which forces you to use all of the features of 1.8?
4. What if they want bugfixes? They don't make those for old versions. Should they just be screwed?
5. Why does the ability to downgrade make them any bit wrong about how much the new version sucks?
