That's odd because your computer should be running 2 java.exe processes to run Minecraft. I don't understand how you were still able to play after closing one of them.

One is the launcher and the other one is the game itself
The launcher stays open in background and closes when you quit the game.
This is slightly different if you have changed the profile settings.

Yeah there's an option I believe that you can check in the launcher that will automatically close that process after start up. That's what WilkerS1 was referring to.
Yeah, that definitely helps. I noticed a big difference after doing that as well, but it still wasn't enough... lol.
I'm just saying, all you people who are talking about having worse FPS, about it being unplayable and all, it isn't 100% Mojang's fault. Most of you DO admit to having low fps before. Although 1.8 did lower FPS, a lot of it is from your computer. They fixed a ton in 1.8.1 though.
My average FPS has been halved from about 125fps to 60fps. 60fps is perfectly playable BUT I get random lag spikes where my game freezes for a few seconds. Not only that, but even when my fps is at 60, chunks load extremely slowly and whenever I go into 3rd person I can sometimes see through the ground and stuff.
TL;DR: Game gets random lag spikes and chunk loading is broken. FPS has been halved.
Chunk loading is related to CPU speed, especially if they are being generated. You can have solid 60FPS but chunk loading can be slow. They are not related.

Thats called micro stuttering, and is something all computers deal with to some extent. There is only one type of monitor that eliminates this effect, and it is an exclusive to Nvidia.

Also consider that programs become more demanding over time, so a decrease in performance between versions is understandable. 1.8 may very well be the cause, but you can't use false logic to support it.

That's just overcomplicating something too simple. 1.8 caused tons of unnatural lag for most Minecraft players and it's something that 99% of people, even including people whose performance is the same, would agree on. Just check all the threads and posts out there about this, not only the most simple ones that just say "i got lag when i updated to 1.8" but also the ones that explain further the possible causes of lag in 1.8 such as previous OptiFine's developer posts where he explains in detail what exactly changed in 1.8 that is what is causing all these issues.
