I am having pretty much the same problem. Except for me it has nothing to do with the update. I was playing 1.8.1 yesterday with no lag whatsoever on max graphics, and then all of the sudden, today is maxing out RAM every 3 seconds then dropping to 50% and repeating. This happens no matter what the graphics are set to, and turning on VBO's or turning off Alternate blocks made no difference. I am not running any texture packs or mods.
If anyone has advice that would be very appreciated.
I have been playing on about 300 to 400 FPS on Minecraft 1.7, but ever since 1.8's snapshots, I'm noticing that the game is suddenly going "screw your hardware 80 fps". What the heck is causing this?
I used to get over 100 fps all the time. 1.7.10 ran as smooth as butter. Now I average 5 fps on min settings on 1.8 and 1.8.1

I still get a laugh out of all the earlier posts claiming things like "oh my gosh, the eye doesn't see more than 60FPS" or "Man! I only play on 15 fps and it's more than enough. You whiner!" or things like that.
First of all, do some research. The human eye does not see in frames per second. It never has. It never will. It's far more complicated than that.
Secondly, their is a MASSIVE difference between 60FPS or 120+ fps, the key to being able to see this is having a monitor with 120 or higher refresh rate, allowing all those extra frames to be displayed. Is the difference from 60->120fps as noticeable as say 30 to 60? No, but it's close.
Now, I will say, that if you are only running 60hz monitors, than having anything higher than 60fps is useless other than maybe getting some feel good placebo effect.
I just hate when people chime in with misinformation. I can't tell you how many times I've had people tell me this, so I instruct them to go out and buy a 120hz or 144hz monitor and report back. When they do, every...single...time, they are flabbergasted(yes I used that word) and are over the moon about the quality, and smoothness that a 120-144hz monitor provides. Of course people who've never used a 120hz-144hz monitor will disagree simply to disagree.
Now, do you NEED to have 120hz and 100+ FPS to enjoy a game like minecraft? Absolutely not. And frankly it's much harder to see the difference, even for me, and I'm running triple BenQ 120hz monitors, and my game is always running at 120FPS capped. The difference is much more noticeable in shooters, such as Battlefield 4, or in racing games like iRacing or Assetto Corsa, things like that.
Sorry to vent. On the topic of getting less FPS in 1.8, I haven't noticed enough of a difference to care about it, but then again I also have a pretty high-end PC. Although, the other day I realized I was only running a 32-bit browser, on a 64-bit system. I also had 32-bit java installed. This was directly after a reformat, so I wasn't really paying attention. Until I updated my browser and java to the proper 64-bit, I was getting horrible FPS, and I was also running out of memory often due to the way 32-bit limits the amount of ram you can allocate. I used to play on a 32-bit OS a long time ago, and I never experienced OOM problems like I did recently in 1.8.

Bravo, I'm gonna save your post for future use if you don't mind.
Although, going with that information, a lot of us don't want to spend $100+ on a monitor. As much as I would like a high end computer, very high end computers with a lot of ram are only good for PC gaming. Which, yes it's a popular thing, but a lot of people like me use computers to *learn things and occasionally play a game. So a laptop usually is the best thing. And minecraft runs very good on a laptop too.

You know dude, actually i get 60 fps when i set it to 60 fps. Dont set your FPS to unlimited, just set it to 60 or 80. And yurn your VBO on. Turn your Vsync off and go to full screen. Hope this works!

Tried it. It didn't give me anymore fps than I already had, but it did make my lag spikes slightly less severe. It stabilized my fps at 15.
Minecraft 1.8 has Mob lag issues. All mobs are testing for the creepers, are they going to explode. That causes lag,and it was added so mobs run from ignited creepers.
This is the most redundant thread of this year... try vbo's if that boots it keep it, try v-sync if it stabilizes performance keep it, try optifine, lower render distance, there are so many things on other topics also you just have to be willing to read it, it isn't too hard.
I've tried everything. I give up. I last played this game in the 1.7.10 time frame and it played beautifully. I come back to it to find its been updated. I fired it up to see the new changes, and its a lag fest. I've changed VBO setting, V-sync, render distance, all of it. Nothing stops the stop and go crap. I went back to 1.7.10 and it's nice and smooth like I remembered it being. They literally broke the game for me. Sux.
Edit: Ok, I updated Java and installed OptiFine_1.8.1_HD_U_B4.jar. I think it worked!! So far its playing nice and smooth again!
If anyone has advice that would be very appreciated.
Just wondering, what hardware does your computer have?

Minecraft 1.8.1 removes that,so try upgrading.
