This is definitely not vanilla; you are playing on a custom map with a custom resource pack and any code that was used to create the "sky dimension" in Beta versions was repurposed to create the End; in fact, the End was internally referred to and named "sky" until 1.8, and as such, it can't possibly exist as the original dimension since the End was added in 1.0.0; nor can purple sheep ever naturally spawn (just to be sure, I found code for 1.2.5 online and sure enough, the method that determines the color of sheep is exactly the same as in newer versions):

The way to spawn mobs that cannot spawn is usually done via custom spawner cages (usually hidden so you don't realize they're there), command blocks, and I think the really old-school way was spawn eggs in dispensers. I'm not sure how many of these were available in 1.2.5, or if they acted any differently then as opposed to in later versions.

Command blocks weren't added until 1.4.2
Then the only possible explanation is that the sheep had been placed there by the map creator; like I said before, the fact you are playing on a custom map explains everything and there is no code support for either a sky dimension or naturally spawning purple sheep in 1.2.5 (until 1.16 it was impossible to add custom dimensions without mods; the forum thread for the map you mention does mention other dimensions, which simply means modifying the Overworld/Nether/End; and until the /summon command was added in 1.7 the only ways get mobs with non-vanilla attributes was by either placing pre-spawned mobs (sheep can be dyed with purple dye) and/or using an NBT editor to edit the NBT data of mobs and mob spawners, which could be modified to spawn mobs with specific NBT data, as well as almost any entity).
No spawner, and a naturally spawned purple sheep in 1.2.5.
