Archaeology hasn't been implemented yet, and there are many unknowns about it.
We have no idea how rare the sites will be or how quickly we will be able to find them.
If we do find them, we have no idea how common it will be to get diamonds or how many chances we will get per site.
We have no idea how hard it will be to obtain a brush or how quickly you can make one.
It is conceivable that simple caving will be faster, especially when you consider that the large caves expose a lot more ore, and there was recently official mention of "really big" ore veins coming in the future that will be very rare but very rich in resources (it was stated that they're big enough to build a castle or mining village around these veins). Caving could even beat strip-mining if they design the ore generation system accordingly. And there's still the very lucrative strategy of trading with villagers in order to get diamond gear, which is fairly quick.
I don't think archaeology will end up being a mainstream way of obtaining diamonds or really any other valuable materials unless it's just incredibly overpowered when it gets implemented.
To download the other ones you need to make a folder in the versions folder for minecraft and put the client and JSON file for the versions in there. They all need to be named the same aside from file extensions. Once you do that, you will be able to choose that version when making a new profile with the minecraft launcher.
Dunno about fastest... but once you develop a village and build some farms (i.e. pumpkin, iron, wool), you have infinite supply of diamond tools and armor.

ok but you cant get diamonds from blacksmiths they only give you 1 emerald for a diamond that is the most horrible villager trade ever

You can't get raw diamonds but, like scorrp10 said, you can buy diamond equipment.
