recently my Microsoft account was compromised and I've had to re-secure and lock-down a number of associated accounts. The final one being my Minecraft account in which I cannot reset the password (nothing ever appears in my mailbox) and ended up creating a support ticket with all my information (including Transaction-ID).
It's been a week and I've yet to hear any response back from Minecraft support. Is this normal?

It took me 2 months to get a response to my question.
It was nowhere near as important as yours so I hope it was down prioritized so that you don't have to wait that long but they are apparently overloaded with requests and unfortunately you may have to wait.
