Not on Bedrock, which the OP is most likely referring to; in that version strongholds do in fact often generate under villages, otherwise, they are more or less random with strongholds spread across the entire world, unlike on Java, where they generate in a limited number of rings around the origin with no connection to villages or anything else (based on the number of results for a stronghold below a village in Bedrock it appears that the game is actually coded to make them generate that way, not just due to random chance; of course, not every village has a stronghold and vice-versa). Either way, the easiest way to tell without eyes of ender is to dig down from the village well (or whatever is now the center of a village):
Or stand on the border between two blocks and mine them one at a time, you won't fall unless you go too fast and don't look before mining a block, though you should have a bucket of water ready in case there is lava next to where you are digging.
In my rather limited experience with looking for strongholds in Bedrock the starting stairwell tends to be under the village well.
Check the four quadrants around the village well ( four corners) by walking two blocks diagonally away from a corner and dig down. It will usually only work if your x or y coords are between 800-2000 or -800-2000, bc the stronghold generates in a ring around about 900 blocks away from x=0,y=0. If the village is under x=800 or y=800 then it most likely won’t work. Keep in mind it doesn’t always work, but it is the easiest and most productive way. If there are 2 wells, check under the block between them, or around the sides (not corners if its acacia/savanna village). When your in the stronghold, find the starter staircase (swirly staircase the doest lead up anywhere) by going thtough doors that arent flat against the wall facing u. Then once u found the staircase (unlass ur alrdey there) start going thru doors that ARE flat against the wall facing u. Count all the rooms u go thru till u have gone thru 6 or 8. If u dont find portal room, go back and try again with all doors u havent gone thru (tip: keep all doors u have gone thru open so u dont get lost). If u still cant find it, go back thru all the ways u went untill u reach dead ends. (The portal rooms usually only spawns 5-8 rooms away from starter staircase). That’s everything i know about using a village to find end portal, i hope it helped.
If u play safe, always dig down in a 1x2 hole, standing between the two blocks so u don’t possibly fall into lava or deep cave or smthn.
Also if u alredy have an eye of ender then stand at the top in center of village well and throw it. Dig down at whichever corner it veers towards or surfaces at.
