I was creating a resource pack, and found a really weird thing; It is in the item section, and it is called "ruby.png".
if someone knows something about this then I would love to hear it.

Not really. Developers leave stuff unused in the game files all the time. If you're curious, search up "The Cutting Room Floor" which is a wiki dedicated to documenting stuff left in the files of various games. Minecraft just happens to not be an exception to this rule.
But given how common the practice is, It's actually fairly remarkable how clean Mojang has managed to keep their texture files. This makes the instances where they don't kinda interesting. Feel free to speculate all you like about the reason for this one exception, but I'd say someone really liked that texture and so decided to just leave it in the game. Maybe let mod makers use it. I know a couple of mods actually do, so I'd say it's worth it to leave one small oddity in.

Emeralds were originally going to be rubies, apparently they switched to emeralds because somebody involved was color blind.
