If you go by the number of mod packs that FTB offers, (which may not really be an accurate way to determine popularity), then 1.7.10 does appear have 1.12.2 beat:

1.10.2: 6 mod packs
1.7.10: 25 mod packs
1.6.4: 8 mod packs
1.4.7: 9 mod packs
I wonder if newer mod packs are just moving to other launchers, such as Curse. That might explain part of this discrepancy.
Modpacks are just pre-built selections of various mods, it is better to look at individual mods, in which case CurseForge lists 191 pages for 1.7.10 and 403 pages for 1.12.2 (each page has 20 mods so there are over 8000 individual mods for 1.12.2; FTB's modpack list is very unrepresentative if it only lists 13 modpacks), Even the latest version, 1.16.4, already has 108 pages. Of course, these aren't all the mods available (none of my mods are listed on CurseForge) but this is a pretty good indicator that 1.7.10 is far from the most popular version for mods.
Another way to look at things, and more reflective of current popularity, is the number of servers available for each version; currently, there are 289 servers for 1.7.10 and 1677 servers for 1.12.2; the majority (4050 out of 13698) are on 1.16.4, though this doesn't reflect mods as much as the use of older versions does, which are primarily used for mods and/or PvP (the latter mostly on 1.8.x, which from the looks of things would indicate that 1.8 PvP is not very popular anymore and/or plugins are used to "fix" later versions).
It is harder to say what singleplayer is like but a look at places like the FeedTheBeast Reddit suggest that newer versions are most popular (in the first few dozen posts I found one mention of 1.7.10, one of 1.12 and 8 of 1.16, suggesting that 1.16 is the current trending version; posts without any version also appear to mostly show 1.8+ as indicated by blocks like granite (there are mods for 1.7.10 that backport them but screenshots like this are clearly in 1.8+ as most mods do not modify vanilla blocks to add variants, as I did myself in TMCW).

Yah ik, also curse can be quite confusing when browsing a mod and you'll have show all files to see updates for older mc versions
but take mekaism or applied energistics as example, both mods decide to switch to a newer mc version at some point and older mc versions wont get fixes that are done in the newer versions
You guys have some valid points, I personally loved that version of mc, 1.16.4 is pretty dope though!
First modded minecraft was 1.5.2 with Gregtech, i was pretty young then xD but the game balancing feelt to nice, it was hard but not too hard and so much to explore and to get to know
Around the release of 1.7.10, Minecraft blew up on youtube and literally made the game legendary
I remember there were a ton of mods released for that update, I played in 1.7.10 well into 2019, I consider it
the golden days of Minecraft especially on youtube.
