I visited one of my villages today and brought a lot of chicken feathers with me to trade with the fletcher. I wasn't paying attention, but was surprised that my feather supply was swiftly depleted. Only then did I notice that the fletcher was charging me 54 feathers for one gem! The next day I paid him another visit and the price had gone down again to 23 feathers for one gem.
I was so used to having villagers reduce their prices when I traded with them that it never occurred to me that they would charge more (except if I did something bad like hit one of them). Either I had never experienced rising prices based on supply and demand or I didn't notice it.
They go higher on price, when you are buying that exact item too often.

An item that was traded gets a price increase when resupplied. If a player does not trade for a higher-priced item, the price is reduced the next time villager resupplies.
