It just seems a little plain at this point, the only way I can have fun is w/ modpacks or by playing on a server. What about you guys? Do you do anything special to make Vanilla a bit more fun or do you throw in some mods into the mix?
I only play Vanilla Minecraft and am quite happy with it.

If you aren't part of the solution, then you obviously weren't properly dissolved.
While I use mods on my "vanilla" first world, where I've spent the majority of my time playing, they are quite minor, only making some minor tweaks to game mechanics like making the inhabited time start at 50% of the maximum so it is at a decent level (even with this it is only around 2/3 of the maximum by the time I finish exploring an area as I'm always moving around), and adding a couple blocks so I can compact rails and cobwebs int he same manner as mineral blocks and string (if I played in newer versions shulker boxes would enable vastly more inventory space; I may as well never even build any secondary bases when I can carry literally months worth of mined resources, even at 3000+ collected per day, and wood and food). Otherwise, most of the changes to my custom version which I call "World1", after the name of my first world, are optimizations and bugfixes (it makes me feel smug when I read update changelogs and see that they finally fixed some bug I fixed myself long ago).
Of course, there are also my actual "modded" worlds but these and writing my own mods are more of a fun side project, as seen by how long it has been since I've released a major new update to TMCW, more than 3 years (I sometimes say that I update the game myself instead of updating to newer official releases but that isn't really true, I just don't really need anything more) and for the most part my gameplay is identical to vanilla, with a playstyle which many people find to be quite boring in itself, yet I've kept it up for over 7 years (once I've made all of my gear and completed the "normal" game I spend virtually all of my time caving solely for the fun of it).
I've been playing for almost 8 years, and while I dabbled in mods a few years ago, they weren't that fun. Sure, you can get the True-Mega-Ultra-Hyper-Sword-Of-Light-And-Dark, but at the same time, what's the fun in that? Unless you choose ones that add simple things, like more food, or more bricks, etc. I still don't understand the appeal of flying around in a giant Helicarrier, swapping back to a dragon, and gunning down mutant creepers with a modified AK-47. Sure, Minecraft gets stale at times, but there's still fun even if you've played survival mode to death. While I'm not the biggest fan of datapacks, they still provide a unique experience to vanilla.

Yeah, this is it for me too. I'm not interested in mods that completely change the game, or simply make it easier. The ones that don't fall into those two categories end up not getting updated for months after new releases, if ever, so you might get stuck on an older version for who knows how long.
My interest in servers only goes so far because usually everyone is TPing everywhere, which removes a lot of opportunities to explore, and takes much of the challenge out of the game because you can simply TP away from danger, and you never have to worry about getting lost. Then there are server economies where just about all the usual resources have been claimed or mined/farmed to death, and the only way to obtain rare items is to buy them in shops, and what's the fun in that? But then vanilla servers are usually not well moderated, so people are cheating and griefing like mad, so again, not fun.
I run my own vanilla server, and only people I know and trust are on the whitelist. The only plugin is dynmap, everything else is straight-up regular Minecraft. No TP, no land claims, no world border, no guns, no super-mega-raging-flaming-poisoning-sword-of-doom. Everyone knows the rules and respects each other. I find this environment a lot more fun.
I love playing both vanilla and modded, but lately I've been playing more vanilla. I really like playing on vanilla because, you pretty much enter a world of infinite possibilities, you can build whatever you like. I can understand why people would get bored after a while but I've never gotten bored of it.
My default game mode is very modded. I love all the extra content you can get from them. My longest-running survival world is chock full of mods. Recently I got invited to play on a vanilla server, though, and have been having a blast with that.
So, in a nutshell, heck no! Vanilla is definitely not boring! I find myself playing both vanilla and modded.
I've been playing single-player survival for 10 years in October time this year, so I would say no. I've been playing my same main world since Alpha for the last 9 & 1/2 years as well, dabbled more than enough times in creative and modded but it's single-player survival that keeps me coming back.
In the end it's a sandbox game, you can make up you own rules, play how you want to play the game. If it bored you either change the rules and do somehting different or just take a break from the game for a while, which there is absolutley nothing wrong with doing reguarding the latter.

There are a few things in vanilla i don't like but i can live with them.
Like you have to dig far down for redstone early if you want to use large maps.
I realy dont like exploring the underground first.
I use some mods that don't alter vanilla but help me with infos.
-Durability viewer to keep an eye on my armor.
-Light overlay to make my bases and mines spawnproof fast.
-optifine becouse my pc is crap ^^
I also used voxelmap for a long time. it's realy helpfull but somehow i like vanilla maps more.
My projects:
-are abandoned for now. I might pick 'em up in the future.
For now i'm working on a private modpack that suit's my own playstyle.
I am gonna stay in modded 1.12.2 untill my potato dies. No mercy! :Q
i cant even play on a server because i get 2 bars of ping and cant even move 1 inch
Nothing bores me about vanilla Minecraft. There is so much to do and there is no end to creativity.
