I used to watch paulsoaresjr as well, I loved his survive and thrive series, I also learned a lot from him. But yeah there are a lot of great mc youtubers out there, I agree!
That's got to be the toughest for me. If I had to say back in the day it would be Direwolf20, Antvenom, CaptainSparklez, but due to what I do with Minecraft now I make my own content and the closest I come to watching content consistently is Xisuma's snapshot videos otherwise I don't watch many anymore. I watch others from time to time but not favourites really anymore.

Nowadays, when I have time to sit and watch Minecraft videos, I'm usually out there trying to find other channels that are roughly my size (very small, lol), trying to discover new quality content and engaging in the community. My favorites of those, I subscribe to and keep watching. I even ended up joining the VMC-Tec server that way--I saw TecThor's series advertised here in the Let's Play section, watched it, loved it, subscribed and left comments. He reciprocated and watched my stuff, subscribed and left comments, and approximately a week later, I was playing on his server!
Some small(er) channel recommendations: all the VMC-Tec channels (TecThor, KaedenCraft, Animagician, Fidlybits, Fuzzy Husky), PuipinM, Wintertooth100, Tobyson3d, NoStress
The one big channel I still regularly keep up on is SmallishBeans. I like his humor, builds, and survival series quite a bit.

The guy has over 12 million subscribers but he doesn't post beginner tutorials and doesn't play in the classical sense, which is why I managed to miss out as long as I did. Apparently he is well-known in the parkour scene, but the videos I love most are the "manhunt" videos in which Dream has to speedrun through the game and kill the Ender dragon before his friends hunt him down and kill him. The most recent one from a month ago had him being hunted by 4 friends (who are all entertaining). It has over 34 million views already, so I am not alone in liking him. EDIT Correction: the link below is the manhunt video from September. The rematch video from 20. October is the most recent one and already has over 21 million views in 9 days.
I also enjoy watching world record speedruns to relax. As of this writing Dream (in-game name DreamWasTaken) is 4th in the category Random Seed glitchless for version 1.9-1.15 and 7th in the same category for version 1.16+. The rankings change on an almost daily basis and all speedrunners need to have great dedication since most of the time countless new games have to be started before the "right" one comes around and luck is with the player. My other favorite speedrunner is the German YouTuber Benex (in-game name realbenex) because I love his calm way of commenting on his play.
I still love all my previous favorite YouTubers, but for different reasons.
Back in 2011 and 2012, I remember watching The Yogscast all the time, and I still do occasionally. I love watching their Tourist and Wizard Burgmund adventure map playthroughs and they will always have a special place in my memories.
Nowadays I tend to watch the hermits, Goodtimeswithscar, Grian and Mumbo Jumbo mostly because I just love Hermitcraft. It looks like a lot off fun to see the hermits mess with each other and it's just a really nice community.

Two of the earliest ones that got me into Minecraft were SeaNanners and X.
But my current favorites are Direwolf20 and Chosen Architect. I've also watched some of Mischief of Mice's and MartyG's videos.

Mine would be AsianHalfSquat, because in my opinion, he's one of the best mod showcase-rs on YouTube, and I've been very interested in mods lately.
Though I tend to get bored when they stray from Hermitcraft content, I'd say a three way tie between Mumbo, Iskall and Grian.
