I came across something like houdreds of characters in one sign, like they were compressed. So my question is how do you accually make a sign full of these.
Those look like special characters pasted over and over onto the sign. You can use special codes to generate things like skulls, arrows and other symbols to get them on signs or when naming an item.
Those are a special type of character known as a variation selector, which go from 1-16 and visually appear as a box with the characters "VS (number)" in them (if they show up as all, as they shouldn't in normal use):
If I had to guess, it was either intentional or they attempted to use emojis but Minecraft doesn't understand that:
At present only standardized variation sequences with VS1, VS2, VS3, VS15 and VS16 have been defined; VS15 and VS16 are reserved to determine whether or not a character should be displayed as an emoji
