How rare is it to find the, end portal without using any eye of ender, pearls, because i was just exploring the world, trying to find a jungle, and i see a water temple, and something else, so i went down to this something else. And i get the advancdement eye spy i was like ???, and then there is the end portal in front of me i was really shocked, it feels really rare to just find it randomly
Yeah I would say finding one randomly without knowing anything about where one may be would be rare. But it isn't exactly shocking either, considering how common Strongholds are once you leave your starting area. There are biomes and other structures that can be much more difficult to find depending on the seed used, where Strongholds are pretty consistent on any seed.

If you have a playstyle like mine it isn't very unusual; I found all three strongholds in my current world while caving (including rediscovering the one I found with Eyes of Ender), as well as all three in another world and at least one in a few other worlds. Even then, it took close to a month of nonstop playing to find all three in my current world, with vanilla 1.6.4 stronghold generation (3 strongholds located 640-1152 blocks away from 0,0; since 1.9 the closest 3 are 1408-2688 blocks away, with the outer radius covering an area that is 5.4 times larger; all 128 strongholds exist within an area of about 7 million chunks), which gives you an idea of how extreme my caving is.
Otherwise, most players will only find them through sheer luck, such as by stumbling across a surface ravine that exposes one or finding one exposed on the seafloor (this is much more common since 1.7 due to deeper oceans; until 1.13 only the portal room could generate underwater, so since then it is easier to spot underwater strongholds). There is at least one known seed with a stronghold above sea level ("Dossier" in 1.6.4 has a portal room exposed at the surface of the ocean).
I mean isnt there only ONE 1 end portal in the whole world? Because when i found it i was about 17k blocks away from my house.
Only the PS4 edition is limited to 1 portal per world (3 on Superflat), but the world size is only 5120x5120.
Bedrock has 3 in a ring around spawn and then they are randomly generated past that and Java strongholds generate 3 in a ring around the player, then in another ring further out with more in that ring, and so on until 128 strongholds are generated (based on information from the wiki). So as long as you haven't traveled an obscene distance in one direction from spawn you probably have one somewhat close to you.

This may have been true at one point but this is no longer the case (as claimed by the Wiki, which is often outdated or just plain wrong, such as claiming that caves and ravines can destroy portals) - they are randomly distributed across the entire world and have been for some time; an example given has the nearest stronghold about 5000 blocks from the origin:
Not only that, they may not away have an end portal (IMO, this is game-breaking - Eyes of Ender should absolutely not lead to to these strongholds, especially given how far away they can be - yet they claim this is intended - Java uses a loop consisting of a single line of code to make sure there is always a portal room added to the structure):
