messing about with creative mode, and spawned a number of aquatic species in the lake at my village. They seem to have all gone away, salmon, squid, cod, and I even threw in a handfull of dolphin for the heck of it. Turtles, they stayed. The lake has no outlet, so they didnt escape. Its not a huge lake, so I can search all of it. Not a fish to be had, only turtles.
ok, so can I have fish, puffers, turtles, and dolphin in the same lake? (I did plug a hole in it that could have been sucking fish out) but even with no squid fish seem to be going away. Dolphins dont last long at all.
Try catching the fish in buckets, or give yourself the fish buckets, and place them from the buckets.
Fish placed from buckets aren't supposed to despawn and that has worked for me in my survivel buffet world where I had to buy the fish from wandering traders.
Or you could nametag them, that should work for dolphins and squid as well.

There's probably an NBT tag you can set if you're spawning them in en masse with commands.

fish and squid share the same mob cap, and both despawn.
