So this is my first time setting up a villager trading hall and majority are librarians. 3 of them have trades for paper and the other has sweeping edge and those haven't changed over the 5 game day span. I haven't traded with them either, I know that means they can't swap trades. Don't know if this means anything but I put books in their lecterns
I was wondering if there was a way to change their trades because I don't necessarily want to trade paper for emeralds when I could be getting good books
If you haven't traded with them at all you can remove their work station (the lectern) and wait for them to abandon their profession. Afterwards, place it back down and wait for them to become a librarian again. This will only work if you haven't done a single trade with them, as after that they are locked into their profession.
On 1.14+, if a villager trade xp bar is not empty, someone has traded with them and locked their trades in. Can't do much there other than breed up a new villager.
Resetting the villager trades must be done during work hours. Any other time, they do not care. Destroy the workstation while villager is trying to use it, observe that the villager look changes to unemployed. Once it does, replace the station. It might be a good idea to block the villager in with the station in a small area while doing is, cause as soon as villager goes unemployed, it might pick up some other unclaimed station elsewhere in the village, or shoot off to socialize.

I kind of have the same problem but the trade bar has been filled up already for some reason.. (multiplayer) is there like a solution to this?
Replace those villagers with fresh ones and follow the steps Bryceio shared above.

the bar was already filled up even though i haven't traded with them... so i cant change their profession/trade because of that problem
Since it's multiplayer some other player probably traded with them!
They only have one profession and one set of trades, not one per player.
So breed more.
(If there only is one you'll have to cure a zombie villager.)

I don't know how the server you are playing on is set up.
I know minecraft since version 1.13.2.
From there upwards you can breed villagers. The mechanics change a bit from one version to another.
Basically say need beds and food (like bread.)
If they can not pick up food the gamerule mobgriefing is deactivated.

In old versions (before 1.14) they breed based on doors (3 doors per villager) rather than beds.
(A valid door had more roof straight out from it, within 5 blocks, on one side than the other (the block above the door wasn't counted).)
