So on a windows PC you can go to the “saves” folder, right click on it, then restore a previous version so you can go back to how your world was before the last time you saved and exited.

I don't know who told you that, but I know of no way to restore a Minecraft world to a previous save in Windows.
Of course, someone MIGHT have a mod that provides that function but regular Minecraft in Windows does not have that capability.
Minecraft bypasses much of Windows file handling.
Deleting a world does not place the deleted world folder in the Windows Recycle Bin.
Once deleted Windows has no record of it having existed at all.

If you aren't part of the solution, then you obviously weren't properly dissolved.
If the world was saved in game then that it, unless a backup was made before that save, there is no going back, and the only real difference between using a mac or windows computer to play minecraft is the OS you are using, its the exact same game using the same code
