I'm not sure if I was clear enough,
On my skins I appear with the steve body type, but when I am playing with no internet (offline) I appear as Alex and cannot set my default skin to steve.
I don't think you can change this for offline usage. The skins tab in the launcher allows you to set your model type (classic (steve) or slim (alex)) but that only applies to online play, it also affects the way your skin will look (sort off).
But to my knowledge this doesn't affect offline play. There you'll basically get a random model assigned and that's it.
Really? They should allow you to pick who you want to play as, that is kind of annoying.
the hosts skin and the steve can be solved with a resource pack i play a modded lan world with my sister and i've made a custom resource pack so i can see her skin and it works quite well if you are on LAN it shouldn't be a big deal to get everyone install the pack
The answer is that Minecraft needs better offline support, like being able to launch the game without an internet connection, or having your skin stored on your machine.

If so, then... it's actually very complicated to try and change the skin appearance. Some people make a resource pack to switch Steve and Alex, but that won't help with what your friends see, unless they install the same resource pack. There's also mods like "OfflineSkins" - but that means all players need Forge and the mod loaded. Even then, there is a further complication - a known bug, MC-52974, means others on a LAN can't see the hosts' skin.
Unfortunately, I don't think there is an answer - and I'm not sure enough people care about it to get the bug fixed, because almost everyone on a LAN has an internet connection.

How do I do that? There's no executable anymore and the launcher refuses to load the launch game button without first accessing the banner data from the server. It has changed with the new launcher.

They just need to give you a client-side copy and a server-side copy, and have the client-side copy update every time you get access to the server. That way you still get the server advantage of being able to have it on multiple clients, and the client advantage of being able to use it while offline.

i still use the old launcher because i actually like it more and i don't have problems if you want to play offline you could use it and the new when playing online
When I play offline I am always Alex, when I press reset my skin I am Alex, and I cannot find out how to switch back to Steve, is this possible?

What about lan? When my friend hosts I see him as steve but when I host he sees me as Alex

It didn't work for me. Maybe a few packets were getting through, but it never timed out and just kept trying to get online.
