I just took forever to get 30 levels so I could get an Efficiency IV diamond pickaxe, but guess what? I got silk touch too. Now, instead of getting cobblestone, I get stone, in my opinion the ugliest block in the game. Plus, I need to waste coal to smelt my diamond, lapis, emerald, and redstone ores. So, I'll get less redstone and lapis per ore because I need to smelt it. (And, I may be wrong, but I think you might get less XP too.)
Is there anyway to remove certain enchantments from items?
Only by combining that item with an item that already has an incompatable enchant, so you could use your pick to repair one that has Fortune but lacks Efficiency.
You can remove all enchantments by combining two items in the crafting interface.

And Silk Touch is nice too, you'll find it useful when you get an Ender Chest or if you want to collect ice, mycelum, podzol, grass blocks etc.

there is a way, I had an efficiency 4 diamond pickaxe with silk touch and other enchantments and I didnt want that silk touch, I gave another diamond pickaxe level 3 enchantment from the enchantment table, luckly it had efficiency 4 and fortune 3 and other stuff, then i tried combining the silk touch one *to* the fortune 3 pick and i got an efficiency 5 with fortune 3.
so it will only work if you there is an enchantment -in this case efficiency- that can be combined to get a better level in both tools.
No, it wasn't combining the Efficiency enchantments that removed the Silk Touch, it was Silk Touch not being compatible with Fortune, had you switched places between the picks you would have kept the Silk Touch and lost the Fortune.
