I am pretty sure that if you go into a nether portal and right-click the villager(adult) with a nametag, you will name it. It is because portals usually cancel GUIs. Again I am not fully sure if it works.

Yes, it does work I have done it before in my SSP!
I'm not certain how many people know this but you can name your villagers by placing a spawn egg on an anvil and renaming
it. I mainly wanted to post this up because there have been a few suggestions on naming villagers so if you don't know,
here you go. If you do know then pass this by.

You can also name baby villagers with a nametag. You can't with adult villagers, but with the babies, you can do the same 'nametag' thing.
You can name an adult villager if someone else is trading with it, though this may have changed.
