I've always seen them as Aliens, as that's basically what they are. They aren't from the MC world and teleport back in forth between their dimension and the MC world. As to why I don't know, but their world kind of sucks.
Endermen are 3 block tall black creatures based on Slenderman, and will attack you if provoked. They are provoked if you attack them or stare at them (point your center thingy on them). They are rare compared to most monsters, and have purple particles surrounding them.
EnderMan BackStory Made By Me ----------------- The King EnderMan was slayed when the nether was released and the END was bombarded with Blazes and Wither Bosses. The Enderman King left the power to all endermans to teleport to enemies and escape from them too. Nether And End Was at war since the castle of steves were blown up by the Creepers. And The Rest Is Up To You To Defeat the enderman army and let The End Get taken over by the steves!

1) Inter-dimensional enigmatic Aliens with the ability to jump between their world and yours. Their home-world, may or may not have been destroyed somehow, becoming what we now know as the end. I actually kind of got this idea from a cool server I played on once, where it's a humans versus aliens type thing, with endermen posing as the aliens who blew earth apart.
2) Our far-flung descendants. In the very VERY far future, a catastrophic cosmic event of some sort causes the over-world to get completely annihilated. This event (possibly the universe reaching the end of it's lifespan?) causes the overworld to become a yellowish-barren wasteland and get blown apart. Only a small chunk of it survives with the help of the then-hyper-advanced human population, who, in a last-ditch attempt to save the human species, preserves that small chunk by sending it to a small artificial pocket dimension that they created. Everyone then moves to that pocket dimension to live on the barren rock.
After all that they make it their top priority to ensure that civilization itself comes prepared for this, and they attempt to make so by traveling back in time via what we call "end portals". They travel back to the time Steve lives in, and, for the most part, remain passive observers. They hope they can change the timeline for the better, to allow the continued prosperity of human civilization through this catastrophic event.
Somewhere along the way their bodies evolve/mutate into what we call "endermen" to adapt to living in the dimension we call "the end".
So the next time you go to the end, keep in mind that you may just be traveling 20 billion or so years into the future! But hey, that's just a theory, a game theory!

They along with the ender dragon, in my mind, feed off of matter. The dragon swallows it all up into its body, becoming more and more powerful. although it doesn't absorb animal life forms. The endermen just feed off of small amounts, explaining why they carry blocks around.The end was devoured by the dragon except for a portion of inedible blocks. And it wants out. The crystals heal it and keep it from dying, but the dragon wants to get to the overworld so it can feed on the almost infinite amount of matter. That's why the player must kill it. But it will eventually reform in the void. The endermen ignore it for the most part, they can at least eat in the overworld.
When the people of the past made the portal to the end, they saw the endermen. The endermen chased the people back into the portal, and they became a normally seen mob.

The creators cut corners by using squid as their base model, and to fix certain issues (ie, being unable to breathe on land) they probably took steps to prevent The Creations from hightailing it back to the watery depths. That's where the water damage comes in.
Unfortunately, some probably unrelated catastrophe (ie, it was George's turn to sleep away the night and he was too busy harvesting to notice) managed to decimate the village and The Creations were left exposed to the elements. It started to rain that morning, causing a panic that finished off the village. The Creations went crazy trying to stop the pain, eventually finding some old ruins to hide in. This provided a place full of stuff for them to work on, which calmed them back down, interrupted only by the frequent annoyances of weird little bugs that kept digging into their work. It got to the point that they simply killed them on sight. Eventually a form of community developed, implementing structure and balance and life went on.
Some time later, other bands of villagers found the decimated village and decided to investigate what happened (maybe there were clues about some disturbing secret or taboo activity, who knows?). They found the ruins, full of terrors of the night, strange little bugs that ate rocks, and The Creations. Figuring out what the missing villagers were up to, the new villagers decided to destroy The Creations and epic battle ensued. The villagers did well, but they could tell they would eventually lose to the unrelenting horde. Rather than trying to escape, they decided to bury the secret once and for all by luring The Creations to the portal. It was a beautiful plan, and it would've worked had there not been a whole nest of the rock-eating bugs there. The Creations--rather smartly, considering what they came from--managed to relate the villagers (who were already equated to water and pain) to those infernal destroyers of their work. The Creations broke in half psychologically and managed to completely surround the villagers, who fled through the portal rather than get ripped to shreds. Enraged, The Creations followed.
Nobody knows what happened next, but somehow the portal was destroyed. Theorists posit that not all the Creations ended up chasing the villagers through the portal, and not wanting to suffer the fates of their brothers or enemies tried to break the portal. They couldn't figure out how to, so they went on to trying to fill it up. We have no idea what sort of stuff may have been in the ruins when the Creations found it, but scholars think that maybe chorus plants were created by some sort of reaction in The End when a note block and a wheat seed were tossed in. Having run out of stuff from the ruins, the Creations went on to tossing random earth in, this formed the endstone and obsidian we see in the End now. Eventually realizing that wasn't working either, they tried lava (no idea how they managed this one, but apparently it worked). Cut off from their brethren, so ends the tale of The Creations (we honestly do not know if any exist in the present day).
On the other side of the portal, pandemonium broke out. Nobody knew what was happening, everybody was reporting feeling strange sensations, and the world was apparently empty. All of a sudden, all kinds of stuff starting appearing out of thin air. Intrepid individuals started grabbing what they could to cobble together a platform to catch more stuff. Things started glowing and doing strange things, eventually settling into the stuff we see in the End today. The platform began to get quite crowded, so they bridged out and started forming islands. It was a golden age of sorts, and an epic island eventually formed. Then the inflow of stuff slowed. It troubled The Creations a bit, but they already had so much stuff that they accepted this new fact. Unfortunately, someone was apparently so inspired to build that he ended up taking all the materials of the bridge back to the platform
Trapped on the island and watching all that stuff pile up on the platform, The Creations started to freak out. Several just flung themselves off the edge thinking they could make the leap, but alas they failed and disappeared into the void never to be heard from again. Others attempted to rebuild the bridge, which sparked minor fights over the wisdom of tearing apart their new home. Still others put their efforts to other tasks, and eventually they discovered teleportation. This put an end to all the fighting amongst the builders, and shortly thereafter someone found courage enough to attempt a teleport to the platform. It worked and he became a hero amongst the Creations.
A new era of building was ushered in as The Creations rebuilt their civilization. More islands were built and decorated with stuff that fell into this strange void world. Then something interesting happened. Up to now, only stuff fell out of the sky onto the platform. Somehow, a bat found its way in and as it flew around it completely fascinated the Creations. It too was affected by their new home, and it started getting larger and larger until it changed into a dragon. It eventually made a nest, which the Creations celebrated because it was so beautiful. One day, the dragon laid an egg in the nest and all the Creation were so wonderstruck by it that they wanted to touch it. The dragon fended them off, but they kept coming. She breathed pain upon them, but they still kept coming. She grew weary, and one Creation managed to get close enough to touch the egg. It disappeared, and in a keening wrath borne of grief she laid waste to the Creations' island. Determined to see every last Creation destroyed, she bolstered her power by erecting obsidian pillars that only she (or so she thought) could reach and placed crystals of power upon them. Eternally renewed now, she descended upon the Creation with all her fury.
Like many of the above comments say, they indeed have lots of resemblance to aliens. Like another former posted above posted, I agree that they pick up blocks to examine the world around them, since this planet is new to them. Again, yes, they do teleport between dimensions.
The reason they teleport between our and their dimension is because they have an overlord, and they bring back specimens of our earth back to that overlord because the overlord has sent them on a mission to one day conquer the entire minecraft planet with this knowledge.
Unfortunately, many of these overlords are killed by players worldwide, often over the course of a year++. This plan will never succeed, as it took the power of all of the overlords to make this plan possible.

Alien if you've ever seen the end city there is a space ship so they are aliens but what about the ender dragon so im going to take a deep dive into this so they live on a difrent planet and theres a space ship in the end city but the ender dragon, dragons are medevil not alien so maybye they are souls of dead players beacause they are a little taller than the player, Mojang showed there creativity by creating shulker boxes in the end city so who are they are defently aliens they probaly lives in the end city maybye the ender men dont live there or built it maybye the shulkers did??? I am going to say there dead players.
1.16 has made them terraformers in the Nether so I would say they are not simply a fallen or undead race but rather a new species attempting to explore and conquer the world slowly.
The reason they prefer the Nether to the Overworld is because water hurts them more than lava.
Honestly I think enderman have some tie to ancient Humans since the portal is in strongholds. I'll let you guys figure out the rest!!!
