The old hunger system is incompatible with exploration; in fact, Beta 1.8 was called the "Adventure Update" and the changes to hunger likely played a part in the overall theme.
For example, do you really think I'd be able to spend as much time as I have exploring underground? Particularly when mobs are this common:
Maybe that was a bit extreme but this is a more or less average session, over a few hours:
Mojang already ruined the fun of vanilla for me twice already; first my nerfing the underground in 1.7 and now forcing you to have to regularly enchant new items (mainly a problem since I'd have to carry an enchantment table and bookshelves with me as I'm not going to run back home, up to 2,500 blocks away, just to enchant every few minutes).
(of course, Ender chests can be used to exploit this; seeing that I typically consume about half a stack of food per play session I'd be able to easily fill up my Ender chest, conveniently clearing space for mined resources as I ate food, and seeing that I usually only eat when I have to, not to heal, that isn't much of a problem and would likely reduce the food I need if I only had to eat to heal, which also heals you instantly; no walling myself in because a witch poisoned me; indeed, why even bother with healing potions, not that I use them unless a witch drops them while I'm poisoned and they only heal like 2 hearts)
NO WE ARE NOT GETTING BETTER. The game is easier. I started playing Minecraft in release and not in Beta. But knowing how the game worked in Beta I can tell it is harder. I have tried playing Beta and I have watched Minecraft videos from Beta and they are significantly harder.

Your post is very well written! I play on the XB1 version, Survival on Hard. I noticed with the recent update (Horses) things really changed. I like the new changes. I like that Hard mode is actually...well hard now. Spiders are easier to kill; skeletons actually shoot at the same speed a player would (if not faster). Enderman are a real pain. I haven't played on normal since the update. Mine on!

Also make a thirst bar so you have to manage your thirst and hunger to stay alive. Other things to include are thirst and hunger for domestic mobs so they will die without proper food and water. Also a weight system that controls the speed of the player and mobs. For the mobs, A heavier animal may yield more food, or more filling food. For a player it may affect their speed, their endurance, attack strength and not be able to jump fast, or jumping uses more energy than it would normally. Also making it so food doesnt heal you, but just fills your hunger. Adding rare plants like aloe which could be used to heal players. They shouldn't add these features to the default gamemode of survival, but make it its own game-mode. It would open up a whole new level of realism and immersion. Also a new focus group. The game may even end up teaching players how to survive in real life situations. (to an extent)"
You can get some of these features with mods such as EnviroMine and Iguana Tweaks. Between the two they add thirst, temperature, air quality, sanity, different movement on different blocks like snow and sand, encumbrance, limited inventory based on weight and other stuff, too.
And if you want more real world realism and environmental challenges like not being able to chop down trees without an axe, not being able to mine without a metal pick and caves that can easily collapse on you if you don't mine intelligently, try TerraFirmaCraft.
There are mods that can allow almost any type of alteration that one would want to make the game any sort of difficulty. And they keep getting easier to install. Just drop Forge into your .jar and place the mod .jar or .zip in the mods folder and away you go.

I have hard enough time trying to make a light fence large enough to keep from being sniped by skeletons.
Going out in the dark is asking the hordes of enemies to kill you... creepers always find a way in T.T EVIL CREEPERS.
You are always out numbered and possibly out bowed.... we don't have NPC allies... T.T wish we did, the wolves are not much help.
the end dragon is evil enough.
