In the past, people would build monumental creations entirely out of resources they personally gathered. Whenever a construction was unveiled, people would question whether it was "legit" or not. Sure, building something with spawned items was cool, but if you gathered the resources by hand to make it, that was awesome.
It seems to me that, because Creative mode is so easy to use, people have just stopped building huge things in survival. It could be that people have stopped caring that it was built in survival, so why do it?
I think that it is sad that such an achievement is so meaningless now. It actually took an element out of survival mode which I wish was still there.
Well, I do think that creative mode made it easier, but not worse. You shouldn't have to go gather the resources if you don't want to. I think it's a matter of taste.

I personally think gathering resources in survival is stupid and a waste of time. It's like having the option to clean a large bathroom with a mop or a toothbrush, and you choose toothbrush.
Have you heard of HermitCraft, and MindCrack? Ever single person on each of those server's builds HUGE thing's legit, like Nebris' base on the MindCrack server.
Me, and my two friends are all currently working on a large citadel on a PvP/Raiding/Griefing/Factions server. It's been a lot of work, gathering materials and making sure that it's practical and looks awesome. We're doing well, and we're feeling quite proud that we did it. Huge things legitly is a matter of taste, and your drive to do it.
Now I am getting into the really complex parts of the Star Base. This next phase required a lot of pre-planning on paper before construction began.
For some reason I was thinking there would be no problems with mobs way up here. Boy… was I ever wrong! Fortunately, I had my bow and arrow with me and was able to clean them up in short order. Take a look at this image taken at night:

I still build legit in survival, in my previous server rendition I built a massive altar monument. In my current server, I've built a massive floating tower containing a ton of magey things from mods like Arcs Magica and Thaumcraft 3.
The only thing I didn't build legit was my massive (and I mean massive) skull home ages ago, outside of MP. He had a red wool tongue, white wool teeth, obsidian floor, lava for eyes and everything. Also had a giant skeleton arm raising out of the ground nearby which held a nether portal. Good times.
I just didn't have the patience to gather all those materials. Building it took me a couple months on and off consistently. Can't imagine how long it would've taken if I had gotten resources legitimately.
I do, but not my best stuff is built in survival. Most of my best builds are made in creative, but what would you expect? They're builds that use tens of thousands of blocks.

I use Creative to fly around and scout out the land to see if it's interesting and fun to build/explore in. Sometimes I might give myself a small starter chest if I don't feel like punching trees to get my basic starting equipment. I don't have or use world edit. I haven't yet built anything huge or awe inspiring but if I do it, I want it done in Survival with materials I've gathered. The sense of achievement is greater.
I'm not saying there isn't satisfaction in building an epic structure in Creative and I salute all those who have made things that make me drop my jaw and say "Wow ...". Even if you didn't do it in Survival, you still accomplished a Great Work and should be proud.
I often will do a "first draft" n creative if I'm doing some huge/complex, then do it again on our server "legit". Nothing worse than realizing that your glass wall needs to be shifted 2 blocks back. It also lets me gather at the materials I need before hand for uninterrupted building.
And for two and a half thousand years, the ring passed out of all knowledge... Rumor turned into myth... myth turned into legend, and legend gave rumor and myth amiss, and went straight into autumn. ...Wait, what?

In survival mode, I am building a floating island over a sort of lake(It's an ocean biome, but it's cut off from the main part of it by another biome, creating a sort of lake).
The island will match the lake's geography perfectly, and so far it has.
I probably have at least a hundred more rows to make.
Just a couple of rows have used many stacks of dirt and stone.
Once the island's base is done, I'm going to make my island less flat on the top, maybe add some coal ore and iron ore blocks in the stone.
Once I have the natural landscape of the island finished, I will start putting animals, plants, and ponds on it.
Once I have those, I will build a castle to call home on it.
Once that is finished, I will make some small floating islands in groups around the main island, making a village on one cluster and leaving the rest free of development.
