I've seen one spider jockey (it died like a chump), and one pink sheep, but the pink sheep was in Superflat so I'm not sure it counts. When the whole world is plains, there are going to be more sheep in general. I also once saw a stronghold partially in a ravine, but it wasn't one of those epic down-the-middle ones, all it was is a few of the stronghold's halls ending in there.

I've seen around 6 spider jockeys, 4 pink sheep, countless of slimes, 4 block high sugar canes, large floating islands, and epic cave systems.
I've been playing since 1.6.6. Lucky, amn't I?

Does mob suicide count? I've been out in deserts before, afk, in the newer versions, and occasionally will see mobs just walk into cactus, and stay there until it kills them lol.
Otherwise, I've seen pretty much everything everyone else has, except a charged creeper. I've never seen that happen before. Or a pig turn into a zombie pigman.
Well I've been playing since late alpha or the start of beta so I've seen just about everything. I've even seen rana the frog girl when I went back and played an early alpha.
YET, I have NEVER found a mushroom biome. I may have even see when the nether biome could generate in the regular world. I know it used to be darn annoying half of trees when set on fire would burn forever in the sky. One thing I've seen new players will never see is squid in underground lakes.I also use to play a version where chunks you did work in would revet back to what they were when the world was first generated. So my fortress would be 1/4 gone when I closed and restarted minecraft.
I've seen just about everything else posted here. I guess one thing I've seen thats not mentioned is 3 ravines all crossing into each other. When I switched my world to the latest snapshot (A version) my base had naturally spawned underground villagers. I still have them alive and trapped because my base is in the middle of the ocean on a small island.
I've also seen a naturally floating cross all by itself.
I've never done it myself or seen it in game. But I heard you can get ghasts (And even stack them) into minecarts. I used to put squids into minecarts and that was cool because they didn't de-spawn. Believe I've seen squid in the nether before too.
I have seen a double dungeon, two 8 diamond ore vains right next to eachother (not connected) about 5 or 6 spider jockeys, 6 or 7 pink sheep, a world where a mushroom biome is right across from the spawn (a random world not a seed from the interwebz) and once I had a friend go underwater in a snowy biome and the ice block froze over him LOL
Well, I've seen two mob-spawn dungeons about ten blocks away from each other, I've found a dungeon with a surface entrance near an NPC village near the spawn point (my current world), tons of surface lava, lots of 8-veins of diamond, a spider jockey, an inland mushroom biome, and more flying islands than I can count.
Ice freezing over me has happened before. Not fun.
Another thing its not rare to me, but maybe to others. I've seen flowers and grass spawn deep underground before. Think I may have seen a tree undergound before too. But not very deep under for the tree. Maybe once bamboo at an underground lake.
Come to think of it. I've never tried to put a slime, snow golem, or blaze in a minecart before. I know you can't put a iron golem in one.
The rarest thing I've seen was a yellow flower on some dirt in a mineshaft once.

1. Jeb screwed up the spawning algorithms for spider jockeys, not that rare anymore.
2. Seen a couple, not too special.
3. Semi rare, nothing special and they are kinda easy to find.
4. I see them in groups of 6-8 all the time, depends on how deep you are...
5. Go to a Extreme Hills biome, find a cave, I can guarantee you will be swimming in them...
Not the special, if you have been playing minecraft since alpha beta floating islands are common, and huge caves still are. Read what i said about diamonds, spider jockey's and pick sheep in previous post, and as for the sugar cane at a low level that's kind of cool...

Ahh the good old days of alpha/beta... good times...
One night it was storming and there was a creeper outside my door, right by my farm.(Most of you know whats coming) And like any steve with nothing better to do, I had a staring contest with minecraft's deadliest mob through the door. Then Notch decided to be a ***** and had lightning strike right by the creeper. Now that farm i mentioned earlier, had a pig in it. So with one lightning bolt, I got a zombie pigman, a charged creeper, and my house on fire. It seems crazy but it happened, and it didnt end well. I have seen a couple pink sheep (noob me killed them) and I've spawned on islands close to mushroom biomes. Random seeds. Seen plenty of jungle and desert temples(might be some internet seeds) and I once saw a mooshroom in a plains (was multiplayer so i dont think its legit)
