if something is one-of-a kind, it's really rare. That's how it works, at least in the English language, in America.

Emerald Ore is rather difficult to find as it is, along with pin-pointing a village to trade the ore.
You are acually not exposed to get emeralds through mining, it is exposed to be from trading. The ore is extremely rare and most people would only find a handful of ore per world. I usually get a village within the area of a map, but a little bit of traveling can help find one also. It sounded like you thought emeralds were ment to get from mining, wich would of been a horrible mistake.

This isn't really an item, but I think the hardest thing to find in minecraft is a good server, might Just be me though haha. As an item I'd say chain mail as the only way to make it is with a fire block

You can acually buy it from villigers in the next update.
Mycelium. I've never found a mushroom biome ever, myself, meanwhile I've at least found all of the other items or know where to get them fairly easily. Plus the fact you have to have silk touch to pick it up, making it pretty much the hardest block to get.
In an infinite world, there are only finite amounts of End Stone, Moss Stone Brick, and Cracked Stone Brick, and just one Dragon Egg, so in that sense, those are the rarest.
As far as infinitely generating blocks and items go, Emerald Ore is a good choice, since it's almost as scarce as diamonds, but can only be found in one biome. Mossy Cobblestone is actually rarer than diamonds, but perhaps easier to find, especially with the new Jungle Temples. Dead Bushes, Lily Pads, and Ferns are actually pretty rare too, even though they're easy to find.
And even though it's a renewable, Ghast Tears are very hard to get quickly. They might be the slowest raw (non-crafted) item to accumulate.

Which would be relevant to this discussion, if a minecraft world were infinite in extent. It is, however, not, and so nor are the blocks which make it up. It is a very very large world, but that is not the same thing as infinite. Some things are infinitely renewable such as wooden blocks and items (trees drop saplings, which can be grown into more trees, etc.), stone-based items (cobble/stone generators), all mob drops, etc., but other things such as dirt, sand, lava, etc. will run out eventually (it might take several lifetimes to collect them all, but sooner or later they would all be gone.)
You can only get ONE. All three strongholds lead to the same End.
Anyway, I think it's chainmail or bottle o' enchanting. The only way to get them on survival is to trade your emeralds (already really rare) with villagers (kinda hard to find without seed) and it's a pretty rare trade offer.

sometimes, when I am at home alone and I cant get to sleep, I like to cover myself if Vasalene and pretend that I am a slug.
