If I do this, I will just stick to the safe way of connecting to my home PC with Team Viewer. Most likely a much better PC, it is free, I get all features of my PC and I have the satisfaction of no viruses because it is a large well known company and two of my own devices.

With splashtop it is possible to control minecraft but as minecraft doesn't have touchscreen support it isn't great. I can use it to load the game up, connect to a server however you have to have the keyboard open to move and it's very slow.
I don't mean to necro the thread from a year ago, just figured I would post the proper information for those who are looking. As of right now there is only the option of using a remote viewing client of your choice and laggy performance/functionality. I am currently working on a way to play it native on the ipad, I am using several open source applications to get this done. A combination of dosbox for ipad with a windows 2000 bootable os, current hurdle is writing a networking hook for dosbox to use the iPads wifi for internet.... It's all a bit more technical than I cared to put in this post. I just wanted to put my final solution to this here with what currently is in place. Starting off, hopefully you have a nice computer and at least an aftermarket router. If you have laggy performance it's your hardware and I absolutely will not help you troubleshoot why yoir hardware is sucking lol.
Step 1. Install minecraft and setup everything like you're going to use it on the desktop. Or use your existing installation.
Step 2. Google MotionJoy gamepad software for your pc... Notice I didn't say Mac... This is for pc users. You may need to buy it or acquire it.. It's up to you.
Step 3. Decide which controller you're gonna use, I chose my PS3 controller because I had used motion joy before and had the bluetooth adapter already. But you can use an xbox 360 controller as well... Google for info on that, I can't help you there I don't own a 360.
Step 4. Add a new game profile to MotionJoy for Minecraft and configure your controller similar to the PS3 version, or xbox if you chose to go that route.
Step 5. Test that you can play Minecraft with the controller.. Mine worked flawless wirelessly.
Step 6. Download/setup the Remote Desktop viewer solution of your choice. I chose Splashtop because I could chose to make it look good or run better in the app. The performance setting was set to on, and everything ran superfast, it looked like my actual computer screen. There was no lag whatsoever.
Step 7. Now that you have a controller hooked directly to the pc, wired or wirelessly, you get around the lag from using the on screen controls. And you should now be able to play the full version using the controller and use your ipad as a viewing screen. Keep in mind if you have to type you can always pop up the keyboard on the ipad app and press t and type like normal.
This by far is as close to having the full version on the ipad as you can get. Hope this helps anyone reading it good luck, heh I did all the troubleshooting for you. This is the best way there is till I can find a way to do what I had mentioned at the beginning.
You probably need a keyboard for your iPad (I think they make those, they make them for android at least)... Don't know how the mouse would work.
