I loot everything, take the lava in the blacksmith, and use their farm as my farm but if I live far away I just take all the seeds and plant them at my house. Then I burn the villages if I have a flint and steel.
I move in, proclaim myself king, and build myself a nice castle next to the village. I'd then start fixing up and expanding things, like roads, animal/crop farms, and new buildings. Once I get enough villagers to spawn an Iron golem or two, I start trading, and watching the emeralds and good loot roll in.
Loot farms stay in the biggest house take the stuff in the blacksmith's chest stay in the village for 1 night then move on and dont kill/harm any villager's

Jeez, for a while there I thought I was on the Bay12 Forums.
Usually I hunt down a farmer, sell him his own wheat for emeralds, then I check around a bit to see if they are selling anything worth buying. If there is a particularly useful one like a priest or librarian I will take a screenshot of the coordinates Worse case scenario I'll trade the emeralds for arrows and move on.
Oh I guess I do loot the chests, but its not like they actually use them for anything. I'll also steal any exotic plants they have, especially carrots.
If it is secondary village, I sack chests and steal hay bales, possibly take ripe crops and re-plant, and leave torches, doors, civilians and golems intact, perhaps use a bed or steal one if I don't have any.
If it is primary village, I set up a permanent base, either in one of the houses or in my own, separate tower overlooking the area.
Then I slowly transform the civil village into a fortress:
1. Wall is set up all around;
2. Torches are deployed in the area;
3. Sloped roofs are destroyed to give place for flat, fenced platforms accessible from ladders;
4. Working blocks are destroyed and put in more centralized sites;
5. Houses too far to reasonably fortify are demolished, either leaving some cobblestone behind or no trace at all;
6. Wood and planks are gradually replaced by cobblestone and polandesite, which are more resistant to explosions and can't catch fire when an accident with lava happens.
7. A tall tower is built, approximately in the center, topped off by a glass dome to overlook the area, serving as my main base of operations.
Why do you guys butcher them anyway?
They are useful and don't drop anything.

Dark caves - lit 'n' cleaned out
Settlements - deep underground
Farmability - to grinder bound
Shields - made creepers but sound
Axes and crossbows - taking mobs out
Try to stay out of render distance until I'm ready to fence/wall it off and light it up for safety. Add a few more farms/composters. Move all beds to a central sleeping barracks...then one night lock them all inside. Gradually move them underground to my autofarms/trading mall/breeder. Then repopulate the village with whatever villagers I no longer care if I keep or lose.
These days I loot any chests but leave the rest undisturbed. I hang a pillager banner renamed "town" on the central well or bell frame, mark it on the map I'm carrying, and continue on with my exploring/mapping trip.

I build a wall around them and light them up and add additional doors to the houses (in 1.6.4 villages use doors instead of beds to determine the population), leaving them alone except in my first world, where I've built secondary bases in them and taken villagers from others to trade with, with most being left alone (in this world exclusively I trade for diamond gear to repair my gear, all my other worlds are modded and my modded gear is untradable so the only trading I do is at the start, to get Mending for my gear, for which I cure/breed my own villagers). I also check out anything on the map I carry with me while caving that might be a village to ensure that I don't inadvertently explore under one before I find it (this has happened before, luckily the villagers weren't killed; because of this, I'll also come up to look around any biomes that may have villages to make sure I don't miss ones that don't show up on the map).
i just look around and leave them alone. i check the chests for something i need but i usually have nothing that i want. i do like to find cartographers to get maps. they are hard to find. one time the pillagers were raiding and i finally deleted that town and started a new survival game in hard mode. chas

I build a few iron golems, make a simple wall encircling it, and make a house in the village church.
I kill all the men then , then I turn the village into my own houses , now I just don't know what to do

I literally kidnap them, and i make them all librarians, thanks to that i have four mending 3 books.
