Been trying to figure this out. I want a superflat world that has regular world depth (aka it goes down more then 4 blocks before bedrock). Top layer is grass blocks, but I keep getting tall grass, lakes, etc. How do I get rid of this?
Also, while lakes and dungeons are decorations they are set separately and they and decorations are not affected by the "generated structures" option, only "building" structures are (villages, temples, mineshafts, strongholds, etc). For example, this is the "Overworld" preset:
Alright, my solution was simply to add enough block layers to the standard superflat preset to match a normal world depth. The normal superflat preset has no plants or lakes, so that worked out.

It should be enough to remove ",decorations" from the preset.
Does setting "Generate Structures." to OFF on the create world screen do anything?
But I can't figure out how to add decorations in 1.16.1, adding ",decorations" does nothing.

Why do I still play in 1.6.4?
When I load the overworld preset, it ends at the plains code. There’s nothing for lakes, dungeons, etc. I’m on 1.16.
