I'm looking for a way to force my students to stay in creative mode. They clearly know more than I do about Minecraft, and are regularly picking on each other. If I disable cheats, then I am not able to teleport, change the weather/light/etc. One of my students took over and dug a hole, created some blocks, typed some cheats, and told me that when kids switched to survival mode they would automatically be changed back.
I'm sure this is a simple/noob question, but I thought someone here would know how to handle this.
So, you want to make sure everyone is always in creative mode?
Well, the simplest way to do this would be with a command block.
(I'm assuming you're in version 1.9 or higher)
Dig a hole somewhere safe (it will need to be at the spawn, in order for it to always work. To find the spawn, follow a compass, or to set the world's spawn to where you are, type /setworldspawn)
(type /give @p minecraft:command_block to give yourself a command block)
Initially, it will look like this:
Next, right click the command block, and paste in this command:
gamemode 1 @a[m=0]
Then, click the button that says "Impulse" until it says "Repeat"
Click "Needs Redstone" to change it to "Always Active"
It should look like this:
Click "Done", and the command block should turn purple.
Now, whenever anyone tries to change into survival mode, they are immidiately changed to creative.
If you need more full control over your students, then I'd suggest moving over to a Spigot server (which we'd be more than happy to help you with), but this will keep them in creative mode.

Another way than the great command block thing is to have a dedicated server with some sort of plugin that limits them from using certain commands to mess around. Just out of sheer curiosity, what exactly are the kids doing?
