This may be a little obvious to some, but to me, I am just wondering if there is a point to having a shovel with Fortune. In a recently new seed, I found a village with a Blacksmith selling a shovel with Unbreaking 2, and Fortune 1. What's the point of fortune for a shovel, except maybe for the obvious reason to get Flint from gravel.
Again, this may be an irrelevant post to some. But, still new to Minecraft here.
That makes sense. Didn't even think of using it for clay. I'll get one and test it out soon. Just started this new seed, so it may take a week to build up. Already have three diamond though. So, we'll see.
Okay. It's been a few days since I tested this. It's truly a success. The fortune shovel does not work on wheat, unfortunately. However, it does work when yielding wheat seeds. With that being, said, Urban_Blackbear is correct. I have confirmed this. My average yield per potato and carrot crop, when the fortune kicks in, are around 5 per crop.
However, since this shovel is iron, you have to be careful not to dig into the dirt under the crop, which is very easy. So, if any of you are lucky enough to get an enchanted shovel from a villager, take your time and just do one crop at a time when using the shovel. Outside of that, I have been using this shovel to farm as many crops as possible, then trading them back to other villagers for more emeralds, to purchase more shovels, and unlock other enchanted items. Right now, I've bought three diamond pickaxes with an enchantment of effeciency level 1 for only 13 emeralds. It sucks cause just before that, I found around ten diamonds from digging different patterns and fighting off lava lakes, which took several hours. :-)

Oh, and I found a mineshaft. But, still haven't found any saddles. I'm hoping to use the shovel to get more crops to get more emeralds... all in order to trade with the leather-smith... just to unlock a saddle, which I hear is difficult to do.
A shovel with fortune will grant you a higher chance of obtaining flint from gravel. That's it I think. If you get fortune 3 on a shovel you will get flint 100% of the time.

flint, clay, blocks that don't require specific tools like nether wart, grass seed
May work for tree saplings also. No fortune shovel currently to test.

fortune definitely does work to increase your chances of saplings, similar to gravel and flint.

You can use a fortune shovel on carrot and potato crops too. Each level of fortune increases the yield by 1.

I would think silk touch on a shovel for mining clay would work better than fortune if the reason is to mine blocks instead of balls?
I believe the saddle is the leather smiths 4th-tier trade which is very easy to achieve by doing simple trades with your new-found supply of emeralds
