I am still a bit new to minecraft. My daughter and I are playing on the Wii u console on survival/easy and are having quite a few issues. In the first world we made, we only saw two villagers, one each in different villages. They have disappeared or been killed. I've searched the map and have found a couple other villager house but no villagers. Also I'm having difficulty finding diamonds. I can't strip mine because the world is FULL of caves and caverns; one of which I 've searched nearly all the branching tunnels and dug many of my own from level 0 to 16 as other forums have suggested. We created a new world going to solve our problem but now can't find any monsters. I've been deep into cave and tunnel systems and traveled all through the night cycle searching. Also staring to have the same problem with villagers disappearing. Haven't tried too hard to search for diamonds in the new world yet and I haven't searched the whole map yet.
Please let me know what I can do besides switching to creative.
If you are not seeing monsters and are in at least easy mode then check to see that you have mob spawning enabled in the settings menu, you may have accidentally unchecked the box while you were creating the world. If you have it in peaceful mode no monsters will spawn.
Villagers are fragile things. If you want to have them in your world and not captive you have to go to great lengths to keep them alive, to the point where most people give up and cage them away for their own good. When you come across a village if you are not prepared to sequester the existing villagers in a safe place they will likely die, unless you get far away from the area and re-log. Chunks do not unload on old gen systems, once you have visited a place it will stay entity processing until you exit and re-load the world. Simply being within render distance of a village at night is a death sentence for the inhabitants, unless a player is there to protect them (which can be quite overwhelming, and even the the best equipped players have a hard time staying alive some nights). Zombies can detect both villages and villagers from a good distance, and will relentlessly pathfind toward them, and can break wooden doors to attack villagers in their homes at higher difficulty settings. Villagers are also quite dumb, they walk off tall ledges, or congregate in one area and push each other off into large holes or other dangerous spots. There is also a very old bug that when chunks do get unloaded and re-loaded entities that are next to solid walls and pathfinding will glitch into the walls and suffocate (happens with animals too). For this reason when caging them you always need to put transparent blocks at head level, these include single slabs, stairs, fences, glass, and a few other less common blocks. Keep in mind that baby zombies are only 1 block tall and can get into the tiniest of places. When constructing cages you also need to make a full 3 x 3 cage, placing four 1 x 2 walls and a block on top is not enough, zombies can attack blindly through the corners and kill or convert a fully enclosed villager. Villagers are also succeptible to lightning strikes, which turn them into witches, this is usually not a big issue, but it is possible.
Keeping them safe requires covering any holes that lead into cave systems in the immediate area of the village and lighting the surface for at least 50 blocks around the entire village. Once a village has a high enough population (I can't recall offhand what the exact number is) then 'zombie seiges' can occur at night and zombies can spawn on any solid block regardless of light level, and in high numbers. It won't happen every night, but it will happen eventually.
As for diamonds, you are just unlucky. It happens from time to time. Imo the best way to get diamonds is to tunnel down to y12 on your map and dig a 1 x 2 corridor, then branch off of the main corridor every five blocks (four blocks in between tunnels), and dig 1 x 2 hallways collecting the resources you find as you go. Mining at this level puts you at the same level as the lava lakes, allowing you to easily bridge over them when you find them and not run headlong into death. You will find diamonds this way, it may take you a little while, but you will find them. You can also maximize the number of diamonds you collect by obtaining a fortune 1-3 enchantment on your pickaxe. This requires an enchanting table and (ideally) 15 bookshelves placed around it in the correct way to get a level 30 (to get fortune 3) enchant. Librarian villagers can also sell fortune enchanted books that you can apply to your pick with an anvil. Diamonds spawn one vein in every chunk (16 x 16) from y1 to y12. Edit: Typo... Y16

Thank you so much for your help. I'll check that setting for the mob respawn. I unfortunately did live to close to the villages. I did finally resort to branch mining and found quite a few diamonds!
If you really don't want to start over zombie villagers can be converted back to villagers. You need to brew a splash potion of weakness (water bottle + fermented spider eye + gunpowder), and craft a normal golden apple. Trap the zombie villager, splash them and feed them an apple and in five minutes they will turn into a villager.
