Now, MCPS3 as we seem to be calling it obviously isn't going to be a perfect replica of the PC version, but there are two things that really stood out to me.
One, it does have many of the features; seemingly all the way up to the Redstone Update, but where are the horses? It's no big issue but I just couldn't really figure out why--when it has all the other features, all the other mobs, and AI that seems to be functioning perfectly fine, horses aren't added.
And the other big thing is borders. I actually didn't realize this until I tried sailing across the ocean, but the borders are back. I haven't seen those since Alpha and now, in hindsight, I realize that this actually is pretty reasonable but I still can't explicitly name any reasons, so why are they back? Also, is there any chance of this being removed in the future? And same goes for horses, can we expect them to show up?
The x360/ps3 versions seem to always be a year or 2 behind, but I believe they plan on catching up to the PC to the point where they'll just be weeks behind rather than years. Also, some updates are probably easier to add than others. I heard that the world sizes are smaller so that a player doesn't go filling their HD up with huge game saves. I think Microsoft and Sony sets limits on how big game saves are allowed to be. This is all just me guessing though too.
MCPS3 feels like an incomplete game to me. I hope they add anvils, emeralds and npc trading as well.
PS3/Xbox might, someday, get anvils. But it will probably be the next gen of consoles that get things like Villager Trading (and emeralds, and zombie villagers, etc). As it is, they're trying to shoehorn a game with a large memory footprint into a small memory system. Only so much can be jammed into 256MB so some things had to be cut. It sucks, but that's the reality of it. Personally, I think that trying to make a PS3 handle hosting the game plus local split-screen plus multi-player online is too much for the hardware to handle and that's why we're seeing so many crashed and corrupted games and system lock-ups. If the PS3 had a way to upgrade the system memory I think that things would have been easier to do. Even just doubling it to 1GB total would have made a vast difference. JMHO.

Actually we're lucky they're still gonna work on old gen console's version. They could be focusing all their efforts on the current generation of consoles.
(Hey, at some point in time "next gen" becomes the "current gen"- and, since they're out, isn't it about now?)
Back on topic, the old gen consoles have trouble handling the existing MC. Any changes or additions require the code to be 're-optimized'. I think it would be sometimes easier and simpler to add something unique to consoles than to try and add something that's complicated from the PC (like horses).
I know we all love our old consoles, and we all have specific parts of the PC version that we'd love to see happen. But we can't have it all, and 4J has to pick and choose what it should (and is able!) to add. Like it or not, the current consoles (you know, the ones that just came out) are our best bet to get most of the PC's (overly hyped?) features.... eventually.
