Here is a pretty basic starter map I've used with each of my 2nd-6th grade classes in the computer lab. The spawn point is at the top of a tower. There is a chalkboard with instructions to find a partner and build a house. After I break a glowstone block in the tower tunnel, students can fall down onto an island in the middle of a large ocean. Tiny islands dot the perimeter of the world, with treasure chests scattered about to encourage exploration off the island. A large public mine sits in the middle of the island, and each entryway has been started to encourage branch mining. All prebuilt structures in the world have been protected with Deny Blocks.
Tip: To prevent students from being 'griefed', encourage students NOT to build on the island, but instead to create their own island or other creative, hidden structure. As a bonus, after I encouraged my students to do this we went from seeing basic dirt/wooden square homes to really creative sky/underwater structures.
