I'm transitioning from peaceful to easy, eventually to normal (once I'm better at fighting).
I've been playing on peaceful for quite a while now, and I can say that it kind of makes the game boring. I need some excitement, so I'm finally going to make the move to easy mode.
I really suck at fighting, though, so it'll definitely be easy and I'll definitely spend my monster hunting time near the lit area around my house. Once I'm a better fighter, I'll venture out into darker areas.
I've picked up some combat-related mods (including Better Archery and Mine & Blade) so hopefully that'll give me a little edge.
I'm still going to have my worlds on peaceful until I get a (very basic, single-room) house built so that I at least have somewhere to retreat to.
Still, going into caves on non-peaceful kinda scares me. I deal with it fine at night above-ground, but being in caves with critters makes me nervous. It's a good kind of nervous, though.
I'm tired of MineCraft being more-or-less Harvest Moon.

I vary back and forth. Most times I play on Normal mode, but when I go cave exploring I flip to Peaceful. Not because I am scared, but because my laptop is an ancient T60 and can't handle the greater than normal mob spawns underground. I go from smooth to slideshow upon entering a cave if I'm on anything but Peaceful mode with Tiny draw distance.
Maybe once I have a better laptop I'll be able to bump it up a a bit.

If you wear armor like I do, Easy would be the hardest difficulty; that is, the damage most mobs deal does not scale up that much with difficulty, as can be seen for skeletons:
Bow
Easy: 1- 4
Normal: 1- 4
Hard: 1- 5
Yeah, Easy and Normal are the same! Normal might average higher but any difference has to be small.
Meanwhile, creepers deal 25, 49, and 73 damage on Easy-Normal-Hard - an increase of threefold, and the armor I wear is rated to guarantee that I'll survive the worst-case scenario, which means that it will be twice as effective on Normal as Easy and three times as effective on Hard - yet skeleton arrows barely scale up, so they will be about that much less of a threat. Basically, this means full diamond armor on Hard; "In full diamond armor + hard difficulty a creeper can knock you down to 2 hearts!" - more like full diamond armor with at least some enchantments as two hearts is uncomfortably close to death!
As it is, I play on Normal but I modded the game so it is closer to Hard in terms of armored mobs, spiders with potion effects, zombies spawning reinforcements (but not breaking doors, which is just annoying; their call for help mechanic also overshadows actual spawning of reinforcements), and so on. This includes changing regional difficulty so it depends only on the total time played, reaching a maximum after 100 hours since my playstyle means I'm always exploring new areas, which I think is a big limitation of regional difficulty for anybody who explores a lot.
As expected, the armor I wear gives me a good margin against point-blank creeper explosions; a diamond chestplate, leggings and boots provide 68% damage reduction, plus Protection IV on two pieces gives a total of 74.4-80.8% damage reduction, losing 6 hearts at the most. I also wear helmets dropped by mobs and have Feather Falling IV on my boots (additional Protection is required to maximize protection from fall damage). That wouldn't cut it on Hard though but I'd just have to wear a diamond helmet (unenchanted), which nearly doubles the average protection; I'd only lose up to 5.5 hearts - less than I would on Normal, and the cost to maintain another piece of armor is negligible to me.

The only problem is that the difficulty curve is too steep when starting a new world.
Mobs are still incredibly stupid.

I normally play on normal, but I'm a wimp and when I hear a creeper start to explode near me I switch to peaceful.
