There are plenty of awesome servers that don't have the combat update, it's not like the choices are super limited. And these servers don't "miss out" on newer updates, as they can just install a plugin that removes all of the new combat features.

Most modern games have a ton of guns rather than swords, and those are timed as well. And Minecraft PVP with and without the new combat system is fast paced. It's not like you have to wait 10 seconds after every attack.

I don't like the new combat system, but not for the reasons you listed. I would say that the new combat system makes Minecraft unnecessarily harder, rather than "unskillful" or it being hard to "make servers 1.8 pvp compatible".
I have found some plugins from google that can make servers running 1.9 or above have the old combat system. You could probably find more, but I just want to demonstrate that it is not hard for server owners to have 1.8 pvp and not miss out on newer updates.

No thank you, I prefer the new combat system. Fights actually take skill now, rather than whoever has the best combination of food, gear, and internet speed. I am of the belief that if your entire notion of skill relies on something that a simple macro for clicking every frame that anyone could set up with free software, it isn't real skill. Plus it makes you need to use your brain in fights against groups of mobs now. Plus the fact that the devs have consistently said it isn't being rolled back.
As for fun games that rely on a timed hit system? Pretty much... EVERY modern game that has melee combat. Dark Souls, Mount and Blade, For Honor, the melee attacks in Overwatch, The Witcher, and tons more. Timed melee has been a common thing in games for... Well since the NES or even before that.

Well they're basically synonymous, its kind of like saying the glass is half full or half empty.
This ''mouse spammer'' you're referring to, is a player who is competent at pvp.
1.9 PvP pro, you base that assumption on probability, and you say there is probably, some'ONE' being the key word, who's competent.
You say it like its far fetched, and it is, because the skill involved is very minimal, its leveled the playing field, if anything its now more chance based, next we'll be rolling virtual dice to attack a player.
You know what I myself love about the combat update?
The fact that it's harder means that people are going to need to seek other forms of strategy to make combat easier or to avoid combat altogether. Now you may actually want to plan a battle to happen on certain terrain, such as on a hill, so you can get the high ground to crit-hit your enemies. As for avoiding combat, now a defense system isn't just a silly idea because mobs and players are super easy to kill.
I don't really think I need to repeat any of the other arguments against these "remove the combat update" suggestions, though. You should just search for it in the Suggestions subforum and read everybody else's arguments.

I'm very alone in my Minecraft worlds as I don't have a very good internet connection to run a server. If you're like me, you might be interested in my Posse mod suggestion.
Explain to me why 1.8 PvP is more balanced than 1.9. Also explain why years of work going into 1.9 mechanics should be removed, just to delete the cooldown system that I could easily fix permanently using only one command blocks in two minutes.

No support, though if they added a dual-wielding system similar to Battlegear, and expanded the selection of melee weapons, it would allow for far more strategies to be made. Attacking someone who's wielding a sword? Better bring a spear and shield and go Spartan. A bow user? Bring a sword and shield for close-range combat to nullify their bow. Someone has a spear? Bring a bow and combat that ranged weakness, or bring a sword and get too close for the spear blade to be useful.

There is an enormous difference in feeling between 1.8 and 1.9.
1.8: You are an omnipotent pest-control service who obtains goodies from poorly-designed vending machines known as mobs.
1.9: You are fighting to survive against evil creatures.
I went back to 1.8 and was utterly bored out of my mind. I'd never really cared for mobs in 1.8 to begin with, but after 1.9? I couldn't go back. And that aspect is far more important than anything in PvP. The only thing that is maybe controversial is the whole saturation/regeneration thing, and even that's not that bad even if it is bad.
What combat system uses a cooldown that I can think of? How about... all of them. Not a single one I can think of lacks a cooldown. Whether it's a reload time or just a small amount of time between swings.
Not to mention the extra layer it added to Survival gameplay. I don't know if I'm the only one, but attacking mobs feels a lot better in the new system, where new sound effects and particles, and the slower more deliberate sword swings make it feel like there's some real weight behind your attacks. And since survival is undeniably more important than PvP will ever be (since Minecraft is NOT a PvP oriented game), that should be taken into account as well.
You're definitely not the only one. With the old system, fighting hostile mobs with diamond armor is the equivalent of stepping on a spider in real life. Now certain mobs have been buffed (I'm looking at you, skeletons) and armor/sword swinging has been nerfed, so it feels like the mobs stand a chance facing a diamond-armored foe.

I can go on for days. Best part about those timed combat games? Most of them are fast paced, similar to the "timed combat" here. The only thing you guys are dragging yourself down with is "There's a visible bar muh spamkliking bring bak noa!"
But it's obvious everyone here is against removing it, I can agree being against it, but let's find some actual reasons to hate the combat system and use those reasons as an excuse to give combat an overhaul or to remove it, because I can't really agree with anything you've just said, op.
Let's start off easy, with the biggest legitimate complaint... The sweep attack works automagically. It should not work automagically, but I mean you guys did want simple combat.
Shields making you 100% resistant to damage also I feel hurts the combat system, before it was just 66% damage reduction, but my gripe with this is that shields are now a nerf to all mobs. You can stand in a corner and be immortal for as long as you want, not that you'd need to since mobs (almost) never swarm you or deal enough damage to justify blocking over attacking. Except creepers. Shields should only reduce creeper damage
On top of that, there's the sweeping edge enchantment, which basically is a buff for players that was extremely unnecessary. Shields blocking too much of the screen I guess is a valid complaint...
There's also a lack of depth to the combat. There is a LOT more than before, but it's still nothing great. I feel combat should be "easy to use, hard to master", that way competitive pvp isn't a joke and there's an actual skill ladder larger than 5 seconds of work. But it's again unnecessary because Minecraft generally is a single player focused game, barring realms and realms only, and mobs are too simple to justify the game's extra depth. Plus "Muh simplicity"
On top of that, some can say there's a lack of weapons. Sure we got an expensively different and not worth it type of throwable potion, and an equally expensive and not worth it tippable arrows, but we really don't have much. We got DPS/Area of Attack swords, then we got high base damage axes. There was a lot of untapped potential here.
Some could also say the golden apple nerf was just slightly too much, and I can ever so slightly agree, but not enough to care. A valid fix is to simply re-implement the recipe and keep it in its nerfed state.
There we go, we've successfully came up with 6 reasons to hate the combat system! So what happens when we remove the current system? The issues get worse. Even if you hated the combat system with your every burning passion, removing it does not fix the issues you wanted to be fixed. It makes those issues even bigger issues.
So I could of agreed with you op if you were willing to think for a moment and try to consider an overhaul rather than an outright removal, but as of now, I can't actually support you even if I wanted to.

Actually... I have to disagree with you on this. From personal experience, Shields will break pretty quickly if you're facing multiple enemies. I actually avoid crafting a shield because I usually want to keep torches or other items in my left hand.

I can go on for days. Best part about those timed combat games? Most of them are fast paced, similar to the "timed combat" here. The only thing you guys are dragging yourself down with is "There's a visible bar muh spamkliking bring bak noa!"
But it's obvious everyone here is against removing it, I can agree being against it, but let's find some actual reasons to hate the combat system and use those reasons as an excuse to give combat an overhaul or to remove it, because I can't really agree with anything you've just said, op.
Let's start off easy, with the biggest legitimate complaint... The sweep attack works automagically. It should not work automagically, but I mean you guys did want simple combat.
Shields making you 100% resistant to damage also I feel hurts the combat system, before it was just 66% damage reduction, but my gripe with this is that shields are now a nerf to all mobs. You can stand in a corner and be immortal for as long as you want, not that you'd need to since mobs (almost) never swarm you or deal enough damage to justify blocking over attacking. Except creepers. Shields should only reduce creeper damage
On top of that, there's the sweeping edge enchantment, which basically is a buff for players that was extremely unnecessary. Shields blocking too much of the screen I guess is a valid complaint...
There's also a lack of depth to the combat. There is a LOT more than before, but it's still nothing great. I feel combat should be "easy to use, hard to master", that way competitive pvp isn't a joke and there's an actual skill ladder larger than 5 seconds of work. But it's again unnecessary because Minecraft generally is a single player focused game, barring realms and realms only, and mobs are too simple to justify the game's extra depth. Plus "Muh simplicity"
On top of that, some can say there's a lack of weapons. Sure we got an expensively different and not worth it type of throwable potion, and an equally expensive and not worth it tippable arrows, but we really don't have much. We got DPS/Area of Attack swords, then we got high base damage axes. There was a lot of untapped potential here.
Some could also say the golden apple nerf was just slightly too much, and I can ever so slightly agree, but not enough to care. A valid fix is to simply re-implement the recipe and keep it in its nerfed state.
There we go, we've successfully came up with 6 reasons to hate the combat system! So what happens when we remove the current system? The issues get worse. Even if you hated the combat system with your every burning passion, removing it does not fix the issues you wanted to be fixed. It makes those issues even bigger issues.
So I could of agreed with you op if you were willing to think for a moment and try to consider an overhaul rather than an outright removal, but as of now, I can't actually support you even if I wanted to.
Actually... I have to disagree with you on this. From personal experience, Shields will break pretty quickly if you're facing multiple enemies. I actually avoid crafting a shield because I usually want to keep torches or other items in my left hand.

I feel like shields last forever now ever since they dramatically increased the durability. They're cheap anyway.
