1.8 honestly didn't give that much, considering that it took a whole year. The most worthy thing I found out of the updates was the new ocean guardians, which were actually pretty neat. But a lot of the stuff like the armor stands or the commands, I really don't find much interest in; plus it isn't that great since it took a whole damn year.
How in the world are armor stands useful? Why the heck would you want to show off your armor? It doesn't make much sense to be, TBH. Seems like nothing but a pointless scarecrow or a closet. I know that in ancient times there were armor stands, but it just doesn't make sense in Minecraft.
Also I don't get these crap load of summon commands; don't see how they are useful either.

Also, many of the features that Mojang implemented were taken from mods, such as armor stands. In fact, Mojang was actually going to get Optifine into the game but the creator of Optifine didn't allow it.
I really expected more, such as an overhaul to the terrain generator. I know that in the previous update there were many new biomes added, but I and many others for a few years wanted more variation and hilly terrain. And no, amplified just creates a mess that doesn't even make variance/sense. Or just something that would actually change Minecraft.

You've listed only 2 things that were introduced in the extensive list of new content, including various new mobs, structures, blocks, potions, food, skin customization. There are many more features than what you make out to be, all of which are useful to someone.
true, 1.8 is a little bit on the downside but still... who doesnt like a good update? If you like maps like I do, then mapmakers will probably make their maps even more better!!

You are just 1 out of 1000 who don't know what to do with these changes they did.
They did so much for the API (i hope release will be 1.9 or 1.10) you can't appreciate. internal handling of blocks, light, texture etc. the listed commands are just the things you see that they added, most changes are internal. all of those commands will be part of the API in some way. Pure speculation: every command will translate into a function API-wise (with identical input vars)
PS: they added a "custom world" option where everyone can adjust values for the terrain generation.
PPS: they will never create realistic terrain if you mean that with worldgen overhaul.
I know of all that but many other people don't so thats why they complain about it.

Now this would be tragic. The 1.8 armor stands are implemented as entities, just like the infamous item frames. So they create a huge amount of lag for a block. The Bibleocraft armor stands were probably implemented as regular blocks, so no lag.

Well, it overhauled the Mob AI, overhauled the Block rendering format, overhauled the way the game handles IDs, overhauled the Block data format/Chunk format, added a few mobs, added new items, made Villagers useful, created Humanity with Alex, oh and made a ton of map-makers happy. I don't see why that wouldn't take a year.
PS: they added a "custom world" option where everyone can adjust values for the terrain generation.
They just added Wedge, a mod created my TheMogMiner himself, without even making it user-friendly. I mean, it's already quite sad they keep taking mods into the game instead of creating something you would expect from a paid professional but they took months to implement code wrote by one of them and they even didn't think of revamping it to make it simpler, more intuitive and more powerful; for example, try having a map with not many caves, high rolling hills and large flat beaches: it takes hours of frustrating trial and error to realize it's goddamn impossible.
And don't even get me started on the "optimization" that is making the game almost impossible to play on my old laptop that used to run 1.6.4 just fine.
The above represent 90% of the update from the perspective of someone who just wants to play the game and not make it prettier or more fit to a plugin API that is going to happen so late it'll probably be irrelevant. It's disappointing to say the least.
I think what a lot of people failed to realize was that some of these features the community has begged to see. Rabbits, Armor Stands, Banners, new stones, better villagers, a use for Lapis, and a female based player model, all highly requested. Not everything caters to everyone, but every feature in the game has a use to at least one person. And one thing I'd like to hope stop the argument over, Bibliocraft didn't invent the armor stand. They didn't copyright it. Armor stands are real life items, so I don't see how they could have "ripped off Bibliocraft"
They also overhauled tons of code, which is why the update took a while. They had to update the ID's of blocks and how they are coded if I am not mistaken. They also spent a lot of time preparing name changing and the new skin format, as well as the new player model, and also working on some things for the API. They added new commands for the map makers, and even a new mode entirely. They even did Optimizations to improve performance in-game. Example:
I would get 19 FPS with a Tiny Render Distance, no lighting, or bobbing. I would have it on fast, no clouds, minimal particles, with mip-map on 4. On 1.8, I can get 41 FPS with those same options. What's great is now I can play without those options and get 27 FPS, which is enough for me to actually play. It takes a lot of time to change code like this.
They also fixed a lot of bugs, which is a great thing. Mojang takes a long time to rewrite code or add new things. Being a developer isn't easy. People should really appreciate the new features instead of wining and complaining. But it is true, you can't please everyone.
If you knew anything about engine work then you'll understand why it took nearly a year to do this update.
Shoe-horning a multi-threaded paradigm into an existing code-base is one of the most (If not, THE MOST) difficult thing to do in modern software development.
I am shocked that they did it so well, however it would have required a lot of rewriting of existing systems to be more thread-safe which is no easy undertaking.
This update is full of features, but if you're complaining about a lack of features then at least appreciate that they are trying to rewrite Minecraft to be better underneath which helps a lot of users on different hardware whom previously struggled at 15FPS with the game due to it's history of having a fairly shoddy codebase.
Mojang have done an incredible job with this update and they have added a ton of new things that you are choosing to ignore and you fail to realise the enormity of the job of adding multi threading to an old codebase, not to mention they are also dealing with modernising the rendering API (Well, modernising to 2003/2004 era of graphics programming) with the Vertex Buffer Object support, all this is a preparation for further engine developments which will help towards writing APIs for users to further customise the game.
The following is purely rant and everyone who can ignore it should ignore it. I shouldn't speak like that but I really want to. Forgive me.
What Mojang did in the last 2 years or so on their 'engine' was basically reinventing a bunch of iron wheels to replace their cracky wooden ones - which is impressive only if they were inventing it for the first time.
Feature-wise they reinvented a poor new-mob mod in 1.4, reinvented a basic tech mod that's too basic to mention in 1.5, reinvented a completely gratuitous set of horses just because someone taught them in 1.6, and reinvented the world that breaks everything else just because they can in 1.7.
It's exactly like one Dinnerbone tweet on Optifine : 'If we broke your mod, blame the mod!'
Mojang have been posing like a big daddy recently, teaching how their kids are supposed to play games, and lecturing on the importance of some 'engine' stuff that only some elite code ninja and the big daddy himself appreciates.
If Mojang really cares about the game itself then they should go grab a decent game engine and remake the game for 10 times. Fixed bugs are only nerds' brag rights, not features.
Your points are worth addressing, yes everything they are doing now should have been done in the start but Notch is not a skilled programmer at all so Minecraft never had the leg up at the start, he was learning as he was going and made some bad choices that are now being fixed, but abandoning the current Minecraft in favour of a new engine at this moment won't solve anything it would just increase the workload, we're all too invested in Minecraft's current form that it makes more sense to fix the current Minecraft or work on a sequel (Which no-one wants right now).
I'm not going to defend Mojang's business practises as they have made some rather toxic decisions based on Notch's personal, uninformed feelings (EULA, Oculus-Facebook) but saying "Mods did it first they are copying mods" is not the most productive stance to take, I'd like to see more mod content reach vanilla players but I also want Mojang to make their own judgement in the vision of their own product, I wouldn't want them to slap in new ores just so a new block can be made that first appeared in a mod, I'd rather they justified their choices and fit them into Minecraft rather than throw them in. They also have full right to steal the ideas of mods.
On top of this, yeah if a mod breaks it's nothing to do with Mojang, the mod is messing about in code they don't really have clear access to, when that changes it's not Mojang's fault that Optifine breaks, it's Optifine's fault for having the code dependency, of which they have no choice at all and are forced to have that dependency.
And you'd be crazy to attack the decision to make engine changes, these aren't light changes for nerds to stroke their ego with it's large refactoring that ultimately helps everyone; Mojang, modders, players, everyone.
Plus it doesn't take an elite code ninja to understand this stuff, it's actually all mostly 2003-era basic practises that failed to be implemented when Notch was the lead developer, it could be better explained (Mojang have failed to explain to the players what their engine changes mean, however this isn't really their place to explain as it's a computer-science problem not a Mojang/Minecraft problem) and if you want an explanation I actually have a video that explains Multi-Threading and VBOs in terms of Minecraft.

people should try to read everything about 1.8 before complaining. just because you are not interested with it, it does not mean it's bad.
